Title: Easter meal planning

Easter is next weekend - has anyone started planning what they will cook over the break?  Want to share your meal ideas?!

I haven't  :-)) :-)) thought that far ahead yet but could also do with some ideas... Friday I am  picking up friends from the airport :-* :-*, for breakfast & then they are staying ;D over Easter.  Sunday the whole family 3DD's, 3DSIL's, & 7DKids .. I think Salads and a BBQ plus of course Hot cross Buns. But I still have to figure out the rest of the Easter break ;D ;D Will post what I'm intending to do as soon as I figure out what I'm going to do.

We never really follow any traditional Easter tradition (excpet for the HCB and chocolate eggs  ;) ). But over Easter I'll have an Irish visitor  ;) who is missing some of the foods he can only get in Ireland (or so he thought  ;D ). While in Melbourne this week I managed to find an Irish butcher for some Irish bacon (apparently only cured and not smoked like ours is), some gammon (for boiling cabbage and bacon) and some black and white puddings. Oh and will cook up a stew over Easter as well using up some of the lamb in the freezer that needs something done with.  So with all of that, I think I'd better make the rest of the weekend fruit and salad  :D  :-))

Oh and will also make a rhubarb tart, Irish Brown Bread to go with the boiled cabbage and bacon and possibly the mars bar dip... if I haven't already had my fair share of chocolate... but it is Easter...  :P

We don't have any traditional foods either. We're going caravanning, down to Bremer Bay on the coast, so it will be BBQ breakfast, wraps for lunch and BBQ tea.
I'll do a mix of hot veges and cold salads depending on the weather.
Of course, HCB's will figure and the ubiquitous Easter Egg!

Would love to go camping, but around here, every camp site turns into suburbia Melbourne!!  :o :o  It's just crazy.

Enjoy Bremer Bay MJ. Are you staying at the newer caravan park?  I thought it was a lovely spot. Enjoy your break.

We stay at the old one by the beach. We go over to the newer one for the delicious coffee and cake at their cafe though!

Interesting ILB that you say that it's little Melbourne where you go, because it's little Nyabing where we go! But, I think that's what makes it so good, (for us, anyway).

My dh has to work over Easter (even Easter Sunday), so no holiday for us...  :'(  Guess you can't close the hospital, can you.  I'm going to make Greek Easter Bread (http://quirkycooking.blogspot.com/2009/04/greek-easter-bread.html) on Sunday (must find some proper red food colouring for the eggs to decorate it - don't worry, we won't be eating the eggs).  I also want to make my own raw chocolate with cocoa butter and cacao, like the Loving Earth recipe ILB posted a few months ago (I think) and put it in chocolate molds to give to the kids.  Probably some hot cross buns with choc chips to share with friends.  And a roast lamb with garlic, lemon & rosemary for Sunday lunch.  And we'll be decorating Easter eggs too.  Not sure what else...  :)

Could you use wooden eggs ? placed on after to give the same effect - shame to waste the eggs - or drill holes top and bottom and use the contents for a dish (do you want to know how to suck eggs? )

wooden eggs might work - but would they die red?  Don't know how to suck eggs - sounds gross!!!  :P

You can make holes at top and bottom of egg and blow, more than suck the contents out (as in the saying "Teach your gran to suck eggs").  Then they can have holes covered with suitbale material and dyed normally.

If you're going to blow eggs it's a good idea to use a toothpick through the hole you make to break up the yolk and white a bit. It is easier to blow that way. We were told this after having done 11 or so for my class one year. It is not easy work.

Sounds like too much work - it's going to be a busy weekend here.  Maybe I'll just use dyed boiled eggs!  (you only need two)

Not completely sure who is coming when over Easter so will be prepared with the following.

Starters -
Green godess dressing served with crackers and vegie sticks
Dukkah served with home made bread rolls and cold pressed extra virgin olive oil

Main - choice of creamy prawn sauce or bolognaise sauce over spaghettini
         Chicken and vegie spring rolls
         Maddy's cheese & bacon rolls
         Tossed salad

Desserts - choice of
               MJ's Mars bar dip served with fresh fruit pieces
               Alina0210's Clinker slice
               Isi's coffee creams
               Jo's chocolate banana nut ice-cream

As a back up for unexpected guests I have bought a cryovac packed standing rib beef roast which will feed 10 people. Hopefully I won't be needing that!

Don't know how a Prodestant woman would go down in a Catholic family over there though  ???  :-\ :-))

After discovering that I can only serve Fish for meat dishes on Friday (we don't follow that at home) have had to re-jig the menu so:

Thursday night:
- Lamb Stew cooked in the slow cooker while I'm at work (this will be the first time I've used it in about 2 years so hope it still works!!)
- mashed Spud
- Mars Bar Dip

Friday Lunch:
- Spinach and Tuna bake thing with mashed spud on the top.

Friday night:
- Barramundi With Tomato Caperberry Sauce And Mash Recipe
- Salad
- Chocolate Brulee Tart

Saturday Brunch
- Full Irish Breakfast

Saturday evening
- Irish Boiled Bacvon and Cabbage with whole seed mustard sauce and steamed veggies
- MAYBE  ??? An Rhubarb Tart

Sunday
DIET!!!! and left overs.  :o :-)) Oh and easter eggs of course  ;)

They all sound lovely. I think I will call at Judy's for a fill up and then to ILB's for another lovely meal!

We're having friends over Sunday but they are very tiny eaters. I think I will wait until they arrive and ask the lady of their house what they may like to eat. I could fill them up on sorbets and icecream I think.

I am so impressed with these menus! 

tonight I am cooking dinner for a friend who just bought a TMX and her husband, so I need to impress!  We are having;

eye fillet with bernaise sauce, pommes frites, green salad and isi's easy portugese rolls
isi's new dessert - the white chocolate mousse with raspberry coulis and almond crocant

Ooh, I like the sound of that meal versaceyoyo, it is sure to impress your guests.  Can't wait to read your review of isi's latest dessert either.  How do you do the potatoes?

I'm very curious. Versaceyoyo and MIL do you live near each other or at a great distance?  It has possibly been mentioned but I'm still ploughing through all the replies that were posted when I was away.

Judy, I usually do the potatoes as per masterchef last year (they cut them up and dry them out for a few hours) however this time I will be heading to the local chipper to get some take away as the potatoes went brown  :(

I haven't got my weekend meals planned yet as I'm not sure when we are heading away yet. Tomorrow we are having hot cross buns for brekkie, vegie quiche for lunch (if the chooks lay in the morning) and herb and parmesan crusted pink ling for dinner with homemade potato wedges, leafy green salad and tartare sauce.  :)
