Dukkah Crusted Chicken
I made dukkah crusted chicken, with a capsicum & semi-dried tomato sauce (recipe in condiments & sauces)
So simple.

Pre heat oven to 180oC fan forced.
Sprinkle around 2/3 cup dukkah onto a tray, press chicken both sides to coat. (I prefer dukkah with an equal mix of pistachios and hazlenuts). Using the EDC dukkah recipe first.
Melt 20g butter in fry pan, and cook chicken breasts about 3 minutes per side.
Once both sides cooked, transfer to a tray, and bake in oven for 10 mins.
Turn oven off, top chicken with foil, and let rest for 5 minutes.
Tasted fabulous, and the chicken was so juicy too.
Was lovely with char grilled eggplant and zucchini.

Amy - This is DE-LI-CIOUS. You're right Maddy, the chicken breast was so tender and juicy. Not dry at all. I cooked mine for an extra five minutes because they were so big. My dukkah fell off so I had to sprinkle it over afterwards. But oh-so-yummy.
cookie - I used the dukkah that Michele gave us at the retreat to make this.
pumpkin pie - Made this with the capsicum topping also, very nice. I used the dukkah as a breadcrumb, so dipped the breasts in egg wash first, then in the dukkah, cooked as per the recipe and the whole meal was great.

I had a lady at a demo tell me she lightly coats her chicken in olive oil, then coats it in dukkah to finally cook on the bbq. I was hoping to try that method but steamed in the Varoma instead of on bbq over the weekend. Will let you know how that turns out.

I was wondering the same thing sarah.j - be interested to hear your comments after you've tried it.

Hi guys...yes the BBQ method works really well - we coat our chicken breast pieces in the dukkah (you don't really need the oil if you are watching kj's, the dukkah still stays on). Then cook on BBQ (no too high a heat as you don't want the dukkah to burn before the chicken is cooked). :) How did the Varoma cooking go sarah.j? Would/did the dukkah stay on/go soft?

I would imagine the flavours wouldn't differ too much, but steaming won't give you the golden crispy coating like on the pan or BBQ.

The varoma with dukkah might not work as well, but would consider cooking in the varoma and then sprinkling with dukkah

Thanks Thermomixer :D. I have been lurking more these days as there are so many wonderful and very competent old and new members who know so much - it amazes me :o :o makes for great reading ;D - have been just gaining knowledge and enjoying the forum.

Michele posted this in response to Katie's question back in November 2012 but I still can't find the recipe.
"Katie, Hally was after it too. I was sure I had posted it but obviously not. I can't remember what combination of nuts I used, that was on the bottom of the container. What I can give you is the the recipe with quantities that I use. I vary the flavours as to what I have in the cupboard or is on special ."

yes please Michele....have seen a few of you discussing how nice it is, and I'm all out of it at the moment.

I just searched for the container of Michele's dukkah, I knew there was a small quantity left in it and that I still had it somewhere.
The ingredients she used were -
hazelnuts, pistachio nuts, sesame seeds, cumin seeds, coriander seeds and salt flakes but of course there are no quantities.
Michele perhaps you might remember roughly what the quantities were.

Michele, was this (http://www.chow.com/recipes/10579-dukkah) the recipe you used for your dukkah - ingredients the same except yours said coriander & cumin seeds and this one says ground.
