Title: Bread & roll shaping guides
Post by: maddy on April 05, 2010, 06:34:54 am
I thought it may be a good idea to start a thread specifically for just bread and roll techniques & shaping.
We can post photo instructions or links, and help each other get creative with our dough  ;)
So for your next batch of bread/rolls/etc. you make, maybe take some photo's of the shaping process.

Great idea - I have a question re rolls - what's a good way of getting even size rolls and nice shapes?

When I make my rolls even though they are just plain round ones I  always weigh the dough for each roll and the hot cross buns were around 90 to 95 grams each.  :)

Another who weighs the dough to even them out... is that a little OCD? LOL!  :D

This is an excellent idea.   I find I can copy anything ,  am hopeless at coming up with an original idea.     When DD wanted a 'different' Deb. frock,  she found one she liked in an exclusive shop  (Georges in Collins St. in Melb).   It was in black lace!!!!   So I stood in front of shop window and copied it ,  and then went home and made it in white.   So if you don't mind me copying your brilliant ideas,  I don't mind sharing those that I have with you.

Might have to find a link. There are many great guides for different bread/roll shapes.  Think we have a link to epis on here somewhere?

These links helped me a lot:

Shaping kaiser rolls (http://www.preparedpantry.com/howtomakekaiserrollsprintable.htm)

When I make my rolls even though they are just plain round ones I  always weigh the dough for each roll and the hot cross buns were around 90 to 95 grams each.  :)

I cut them equal with a spatula

I actually weigh the big lot of dough and work out how many rolls/buns I want and then weigh each to make sure they are the same size. I got sick of my rolls being all totally different sizes. I do the same with pizza dough. It only takes me a moment.

I'm definitely not OCD, but always weigh out my dough when making rolls!

Tonight I had some fun with my rolls.......

I used Tenina's bread roll recipe, but I cut the sugar down to 50g, and used full cream milk.  Very happy with the results.
I also used an egg glaze which gave them a lovely golden colour.

Egg glaze: 1 egg whisked with 1 tablespoon water.

Plaited roll

Cut your dough into 3 pieces, and roll into same length sausages.  Pinch one end together, and plait the strands from outside strand and under centre strand.  Repeat process with the two outer strands.

Tuck the ends under neatly, then glaze with egg wash and let rise.

...

Don't know what this shape is.....I winged it  ;)

Shape the roll portion into a fat sausage, and cross over like the breast cancer symbol

Curl the two long strands around, and tuck under the centre piece.

Egg wash then rise.

...

And the happy face, poke a hole with the end of the wooden spoon, and use a sharp knife to cut in the smile.
Egg wash, then place the poppy seeds in for his eyes and smile.......the kids love it  :D

Maddy looks like you had fun today - bet it's the start of a new craze.  I have only 1 roll left in the freezer so was planning to do another batch tomorrow (if there are no interruptions).  Like you, I was going to try some of the designs which have been posted on here too.

Of course!

I know round rolls are easy, but sometimes it's hard to get them smooth on top. This is how I do it. Roll into a ball, then push the ball up between your forefinger and thumb, twisting dough underneath. These are Hot Cross Buns.

I did plain round rolls tonight using Isi's Portuguese recipe.
Flattened a round (100g) out with my knuckles and then tuck all the sides in to form the round.
Wash with oil/water mix and sprinkled with sesame and chia seeds.

BEST BUNS in the history of EVER!!!!

 :-)) ;D :-)) ;D :P

All these beautiful photos tell a story,  sorry i still can't post photos.   I make snail rolls.  These can be any size.  Take a piece of dough,  form it into a long sausage,  roll it around you finger, pinch the end to attach it to the coil.

I just posted this link in the cob thread, but thought it belonged here too, as it's quite handy for shaping bread.

Oh well - too slow.  After thinking for ages that I should find links with pics you have already found the ones that I was going to post about.

Thanks.

There are others, but I'll leave that.  things like epi sticks/rolls are here somewhere already.

Two DD's with the thickest longest hair you could imagine and I stuffed up on the plaiting of 3 Colour Bread ...(knew I should've taken more responsibility when they were younger, and not just bought a book and  left all the braiding up to them to learn! its payback time i'm hearing you)
