Name of Recipe: Noodle & Cheese Slice
Number of People: Serves 4 - 6
Ingredients:
180g tasty cheese cut into cubes
50g parmesan, cut into cubes
120g thin egg vermicelli noodles
1200g boiling water
5 eggs
250g frozen peas & corn
60g roasted red capsicum, diced
S & P to taste
Preparation:
Preheat oven to 180oC.
Spray a casserole dish - I used one 26 x 18cm
Grate the cheeses for 10 sec/speed 8. Set aside. No need to clean the bowl.
Place the separated noodles into the TM bowl, pour 1200g boiling water over them and cook 10 mins/100oC/reverse/speed 1.
Pour the noodles into the steaming basket and rinse them with cold water. Drain well and place noodles in the bottom of the casserole dish.
Whisk the eggs 10 sec/speed 8, stir in the peas & corn, capsicum and 1/2 the cheese for 30 sec/reverse/speed 2.
Pour over the noodles and toss lightly.
Top with remaining cheese and bake 25 - 30 minutes, uncovered
Serve either hot or cold with a salad.
Tips/Hints:
Cut into fingers for school lunchbox or cook individual ones in muffin tins.

Well I made an adaption of your noodle slice tonight Judy.
I am in desperate of a shopping trip, so I had to make do with what I had.
This recipe is a very adaptable one ;)
The ingredients I used were:
150g angel hair pasta,
140g roasted onion & chive vintage smoked cheddar
90g parmesan
170g zucchini
120g smoked ham.
Then stuck to the recipe with 5 eggs and s & p to taste.
Enjoyed by all, especially the kids ;)

Now that eggs are welcome back at my house I made this a couple of nights ago with some bacon added in.
It was yum. I loved the noodles in with the egg. My eldest two children didn't like the capsicum and peas, but I do have approval to make it next time with the bacon, some chicken and corn.

Judy, you think you could do this recipe with rice noodles, but obviously adapt the recipe to reduce the cooking/ soaking time for the noodles. We cant eat wheat pasta, even though the photos look great!

Any type of noodle would work Merlin, just cook or soak them as per packet instruction times. I think thin ones preferably though.

Just saw this lovely recipe and I think I will make it for the BBQ Saturday. Love how I can make it in advance and then pop it in the oven when the guests arrive. So adaptable, the variations ae endless. I usually make impossible quiche, so this will definately be a hit.

This is one of my regulars for lunches during the week. For the pasta I usually use any small shape that I have to hand and I also add a couple of tsp of grained mustard and usually c. 150 g of fetta. I've recently stated tossing semi dried tomatoes on the top as well. Ths slice iis very tasty and will take almost any variation you care to make.

Made this for our lunch today - had forgotten how quick and easy it is. I had some leftover noodles to use up and remembered this recipe.
