These were very tasty but I found the meat didn't mince very well. I had to halve the mix to be able to get it to the texture I wanted. Next time I will either use bought mince or mince the meat first then add the other ingredients. I would also recommend adding a bit of fat from the meat to help with moistness and maybe also a tomato.
Although I sound critical they were really very tasty & very easy and I will definitely make them again.

Thanks for the tips Jan.
I had this in mind to make shortly.

Home made mince is usually very lean as we tend to cut all the fat off but if you can bring yourself to leave some in, it will be a lot more moist. Sounds like doing 1/2 quantities of the meat is the way to go VHJ and it will be interesting if you or someone else could compare the moistness of this recipe with bought mince. Did you make some sort of sauce to go with them or did you serve them as a hamburger?

We had them as a hamburger. I did leave the fat on the meat but there wasn't a great deal of it anyway.

Don't think you are being critical. The TMX does often struggle with getting a good texture with mince unless it is done in small amounts.
-
I always find it minces much better when you drop meat on to blades that are already going at about 7-8 speed. ;)
-
Agree - but then you can only use small amounts and be ready to quickly turn off the blades before it becomes paste. Hve been caught doing that !!!

DH made these last night - I cautioned him about the mince becoming paste so we just used beef mince instead of doing our own and mixed all the other ingredients into the mince. They were absolutely delicious - the texture was perfect. I don't like TMX meat paste!

Does meat mince better when it's in frozen chunks? I thought I read that somewhere....
