Title: cauliflower as low-carb alternative to mashed potato or rice

I seem to remember that there are some low-carb cooks out there in the forum so I'd be grateful if they could give me a hand preparing cauliflower.

Do you shred it in the TMX and then steam it with a little water in the bowl or basket? Or do you tip the shredded cauliflower into the varoma and then steam it?

Any help would be appreciated!

I am not low-carb, but a couple of things with cauli.  If you want it as mash then you can just blitz it and cook with some water or stock on 80 and then blitz again to make it smooth - just adjust how much moisture - not too much.

Alternative that i have done a few times - get the florets and place them in the TM bowl and blitz them on REVERSE  :-: for a few seconds and it will take on the texture of cous-cous ?  which you can steam for a short period (or eat raw)
