Tweaked this recipe in the "My Way of Cooking" book.
DD doesn't like red peppers, so substituted olives (not sure how many - DH was cooking) and mushrooms which he put in at the beginning of recipe so they came out very chopped up (amazing what you can hide in a sauce! ;) ), we did use the tomato 'frito' tip as well.
we used about 500g of skinless boneless chicken thighs (whole) but a full amount of sauce - final amount was just right - a rich tasty sauce and chicken cooked perfectly in 20 mins. Flavour was great. I think you may need to double the sauce recipe if you were doing 1000g chicken. Adding other veg at the beginning would also work - maybe carrots or other root veges???
The flavour was reminiscent of a cacciatore, and DD and DS (teenagers) gobbled the lot! - so much for leftovers :o

Hubby made this today as the recipe appealed to him in the MWOC book.
It had lovely flavours. The only problem we found was that 1kg of chicken pieces did not fit in the TMX so had to leave some out. We used legs and wings but next time will probably use thighs that have more meat on them as we were still hungry after eating it (but had to leave a little leftover for hubby's lunch tomorrow).
Probably should have had a side dish with this too.
I'll try and post a photo tomorrow if I have time.
