Title: Danish Braid

Refer photo's and instructions from www.artisanbreadin5.com as they are very easy and self explanatory.

Make Brioche Pastry from EDC p 116. Makes double the amount required, so do x2 different fillings.
Mix together the cream cheese, sugar, and vanilla in the TM bowl Speed 5, 10 seconds. This will make enough for the 2 braids.

Alternatively instead of the cream cheese mixture, make some Almond Cream:
Place 1/2 cup almonds in TM bowl and process to a fine meal.
Combine 3 egg yolks and 3 tablespoons sugar in a bowl and whisk until pale and creamy. Fold in 1 cup of whipping cream, 2 tablespoons brandy and then the almonds.

One braid I made was cream cheese mix, raspberry jam, frozen raspberries. The other was cream cheese mix, apricot jam, and Chookies Caramelised Apples (see Desserts)

Creampuff,  these look great.  Did the dried apples go soft?

dried apples? i am pretty sure your recipe said Granny Smiths  ??? in which case they were very soft, but still "together"

JD we ate one which was the raspberry one, and I will add more raspberries next time. Frozen raspberries don't look to be the same size as those ones in the picture where they placed them in a line down the pastry. I had to freeze the apple one, and to fit it in the freezer I had to cut it in half (so I thought I had better slice off a bit from the middle) and that was delicious. Probably my favourite this time, but the apple pieces were bigger and therefore more fruit in it than the raspberry. Huge compliments from the family and a lot of fun to make, and no not good for the hips  :'(, but definitely the way to go if you want to bring smiles to peoples faces and win hearts  :D

Great stuff CP63.  Good work with combining all the recipes/ideas to create a little masterpiece.  Yes shame that it goes straight to the hips.
