Bacon, potato and cheddar soup
Meat on the menu
Large volume - 2L so goes a long way. I didnt have white wine so left that out and used water with stock concentrate instead of chicken stock. I didnt have enough cheese so only used 100g cheddar and 50 of parmasan. This was plenty!!! I wouldnt add any more it would be too strong. Very thick but i like it like that. Kids not so keen but they dont like soup normally anyway. Happy to dip toast in it though.

I've made this too and it was nice but a bit thic.
It would be a great pasta sauce too. Really nice in flavours.

Thanks Sherre et al - great to gave soups that you can make from staples in the cupboard. Have noted the thickness issue.

Thanks Riv Mum - you are right to cut down the cheese!!! 100g was plenty. I think it would be a good idea to choose the potatoes carefully. Mine was really floury and not that great.

I tried this soup last week was so yummy
I used half sweet potato and potato instead
and you can cut down the cheese as stated before

Made this tonight with freshly made chicken stock from EDC.
We loved it! It was thick but we enjoyed it that way. I had a bit less parmesan and a bit of extra bacon.
This will go down as a definite favourite in our house.

I made this and wrote on the recipe that it was too salty and cheesey, so I'll cut back on the cheese next time.
