Name of Recipe: Lemon Sauce
Ingredients:
1 Lemon (zest and juice)
1 Cup sugar
1 egg
1tbsp butter
Preparation:
Place egg and sugar in TMX. Mix well (speed 3 5-10 seconds).
Insert butterfly.
Add lemon zest and lemon juice
Cook 8mins speed 3, 80 degrees
Add butter, blend through (speed 3 5-10 seconds)
Place into a container/jar, I found I had to remove the layer of froth off the top (easier once it started to settle)
Tips/Hints:
This was a lemon butter recipe that did not thicken enough (probably not cooked long enough), but I think would be very nice as a lemon chicken sauce (which I might make with it anyway)

You poor thing - you could possibly have just added another egg and cooked it a bit longer?
But sounds good for lemon chicken or even like a hollandaise over vegies? maybe a bit sweet?

I did consider trying to thicken it. But it is so tasty as it is... So lemon chicken I think it will become (just don't have any chicken breast yet so will wait until after shopping day)

Going to cook it up tonight I think :) Shall let you know how it goes, but it definitely is a tasty sauce at moment

And it looks like and tastes like lemon sauce from lemon chicken, or I prob would have tried thickening it up as it was for lemon butter (but since it neither looked like or tasted like lemon butter...)

verdict is... It made REALLY yummy lemon chicken :)

I had this tonight with dinner, it was amazing! I cooked it first, and put it in a container in some boiling water in the thermo server to keep warm while I cooked some chicken & vegetables. I just needed a little bit over the chicken and it was so full of flavour. I froze the leftovers for next time - it really turns a simple chicken & veggie meal into something a lot less ordinary. I will certainly be making this again, and next time I might be a little more organised in how I freeze it!
