Title: Onion and Bacon Muffins
Post by: Hebe on July 18, 2010, 02:05:45 am
This is only my second post on this site but I have been lurking and making good use of my Thermomix - particularly at the weekend.

My family love savoury muffins so I made this recipe and thought I would share it with you.

100 grams bacon
1 onion
50 grams olive oil
50 grams butter
2.5 cups of self-raising flour
1 cup milk
2 eggs
100 grams Parmesan (plus a little extra for the top)
salt and pepper
1/2 tsp baking powder
a few drops of Tabasco (optional)

Put onion and bacon in TM and chop for 3 seconds on 5.  Add 50g olive oil and cook for 3 mins, 100, speed 1.

Add all other ingredients and process for 40 seconds on speed 4.

Put into muffin trays, top with Parmesan and cook for 20 - 25 minutes on 180 degrees c

Well done on posting your first recipe....

Hi Hebe

I love this idea!
I got some difficulties with cup measures 8) -  do you mean 2,5ml cups?
Thanks

Isi, by looking at the recipe I think it will be 2 1/2 cups of Self Raising Flour - each cup holds 250ml - I use grams and that would equal to 375g - hope this helps you out

Hebe this is the sort of thing my fussy one would love to take to school for lunch - thank you  :-*
