I made this today. Very easy to do and we really liked it. I would suggest making double of the lemon curd and use as much as you think, any left over can be used in other ways. I found the amount in the recipe was not enough for the number of crepes this mixture makes. I only spread like you would butter, but as I used it up, I had to put less and less on the crepes. When I bit into the bottom crepes I could really get the lemon curd flavour, really lovely. I did make with the MC off, and the steamer basket over the hole for about the first 5 mins, then left it bare for the remainder. Whether that had anything to do with less curd I'm not sure, but I would just double it next time.
Went perfectly with strawberries and I could imagine fresh blueberries being nice also. 4/5 :D

Yum. Thanks for the pics and review.

That looks lovely Julie. I haven't looked at my calendar for a while as it isn't hanging up.
-
That looks delish! Where do you get the calender from?

Ask your consultant rubyslippers, she might be able to get one for you. I love food calendars, never make anything off them but I still love them :P :P JulieO, that looks so good, nice dinner party fare.

Thankyou everyone, I've been meaning to make some of the recipes from the calendar for ages.

Here you go Narelle. :)
LEMON CREPE STACK
Crepes
4 eggs
500g milk or buttermilk
Pinch salt
2 tblsp oil
240g plain flour
1 tblsp sugar
Place all liquid ingredients into TM bowl, and mix for 20 secs/speed 3.
Add rest of ingredients into TM bowl and blend for 30 secs/speed 6.
Remove to a jug and allow to stand for at least 20 mins. Wash TM bowl. Make lemon butter.
Lemon butter (SUGGEST DBL THIS AMOUNT & use as needed)
Juice 1 large lemon
110g caster sugar
80g butter
2 eggs
Insert butterfly into TM bowl and add all the ingredients. Cook for 8 mins/80 C/speed 3.
Check to see if mixture coats back of spoon, if not cook for a further 2-3 mins or until desired consistency is achieved.

Heat shallow crepe pan, butter the pan with a very small amount of butter and pour batter into hot pan. Never pour batter into unheated pan as it will stick. Turn over once edges start to lift.
Whilst still warm layer crepes with lemon butter into a spring form cake tin with approx the same diameter as your crepe pan. Press down firmly and refrigerate with weight on top until completely cold.
Remove from pan to serve in wedges with whipped cream or mascarpone and fresh berries or fresh fruit of choice.
