These are some very tasty sandwiches. I modified a recipe in Italian EDC a little bit and this one came out. Since then I often make them. I hope you like ;)
Wholewheat Rolls
Ingredients:
250g milk
20g fresh yeast
10g sugar
200g wholewheat flour
350g all purpose or bread flour
60g extra virgin olive oil
1 egg
10g salt
1 egg yolk, slightly beaten
Poppy, nigella, sesame seeds
Preparation:
* Warm milk for 1 minute at 37°C
* Add yeast and sugar, mix for 4 seconds on Speed 4
* Add wholewheat flour. Sift in all purpose flour.
* Add oil, egg and salt. Knead for 4 minutes
* Get pieces from dough, roll and place them in oven tray which is preciously covered with baking paper
* Let them rise for 1 hour
* After risen, brush with egg yolk and sprinkle with poppy seeds, sesame or nigella as you wish
* Bake in preheated oven at 180°C for 20 minutes

Notes: I needed mid sized sandwiches so I prepared 15 rolls in total and each weighed around 65g.

Were they called panini in Il Mio Bimby? Think they would be better called "rolls" Panini gets interpretted as sandwiches, but we use the word sandwiches for slices of bread with filling either on or in it.

They weren't called panini
This was a pan brioche recipe in Bimby book, I modified it
Since I tend to call both kinds as sandwiches, my mistake :)
I fill these ones too after baked;)
