Would anyone know how to make coconut rice??? I am thinking that it would be along the same lines as the garlic rice but not sure just how to go about it. Thanks Sandy

I have a much fancier one in one of my Asian cookbooks which is cooked with star anise, vanilla pod, toasted coconut, coconut milk, cream and milk if you want me to post it.

SueJen, was about to make this to get the conversion right but found I didn't have enough cream. Will make it tomorrow and post the recipe later in the day.

I'm pretty sure I have seen a recipe by QuirkyJo for coconut rice. I tried to do a search but couldn't find it.
I have a note in my "to try" list on my computer referencing this and with her name.
I recently purged a bunch of my bookmarks (many thousands) and lost the link to her blog or recipe site.

I couldn't find one on Jo's site Andie but then I remembered Chelsea had a savoury version on hers here

The one I will be testing today is a dessert recipe so by the end of the day we will have sweet or savoury coconut rice to choose from hopefully.

CP63, the original recipe was served with stewed mandarins and star fruit but it is nice on its own or when cold, decorated as I did (where the recipe is posted).

I prepared this soon after I got my TMX last November, using only some of the vegetables and pork that was already cooked.
Later I made it without meat and substituted fruits for the vegetables, apples, shredded quince and dried cherries (no egg), which worked very well as a dessert (topped with Crème Anglaise).
This recipe is very versatile if you use your imagination. Just cook the rice, add some shredded coconut and pineapple and your probably wouldn't need any additional sweetener.
If you have dried fruits, you can put them right in with the rice and they will plump while the rice is cooking.
I use dried mango a lot when I cook rice in my rice cooker and I see no reason why it wouldn't be lovely mixed with this rice.
