Title: Parmesan bread (like focaccia)

Just winged some bread tonight, and was really happy with it.

Parmesan Bread

80g                parmesan, cubed
270g              water
2 tsp              dried yeast
500g              bakers flour
1 & 1/2 tsp    "masterfoods" pizza topper
2 tsp              bread improver
1 Tbsp           extra virgin olive oil
1 tsp              salt
garlic infused olive oil for basting


Place the cubed parmesan in TM, and process 7 seconds, speed 8.  Set aside in another bowl.
Place water in Jug and add yeast.  Mix for 2 minutes, 37c, speed 3.
Add in olive oil, flour, bread improver, pizza herbs and salt.
Set lid to locked position and knead for 3 minutes.
Leave dough in jug to rest for 10 minutes.
Whilst resting, heat oven to 150c for 5 minutes only. Turn oven off.

Line a roll pan (rectangular shape) that is approximately 30 x 20cm, with grease proof paper.
Roll dough out to fit, and place in tin.  Just push dough to fit into corners

Place the dough into pre warmed  oven, and leave to rise for 45 minutes.

Once risen, remove tin and pre-heat oven to 200c.
Whilst oven is heating, dimple the dough with your knuckles or thumb, and baste with garlic infused olive oil.
Sprinkle the pre-grated parmesan over dough, then sprinkle liberally  with the pizza topper.

Once oven is heated, pop the bread in and cook for 25 minutes.


I left mine in the tin to keep warm, whist I was finishing dinner.
The topping is lovely and crunchy.

Was lovely with salami/tomato/baby spinach risotto

Good one maddy, just finished reading this on the other side  ;) ;D  Really impressive rise on your bread/foccacia.

What herbs are in the Masterfoods Pizza Topper Maddy?Don't have that brand here in the U.K.

Hi CC  :)

Pizza Topper Ingredients

Marjoram, Basil, Red Capsicum, Natural Chicken Extract, Cheese Powder (Milk and Cheese Solids, Hydrolysed Corn Protein, Yeast Extract), Oregano, Tomato Powder, Garlic, Maltodextrin, Salt, Parsley, Turmeric, Thyme, Herbs & Spice, Chilli

Just a couple ingredients ;)

We had this yesterday and loved it. Next time I will probably only do a half quantity as the freezer had to eat quite a lot.
I love the taste.

Judy....it really doesn't need butter.  With the garlic oil and parmesan....I felt that's enough fats  ;)

Not so unusual in Oz CC. Yeast extract contains super high levels of MSG (which is why companies use it to boost flavour). You could make a mix using the herbs listed and I'm sure it would still taste very nice.

I made this last weekend.  My DH has a mental aversion to "strange" cheese, including parmesan.  I saw the dish of grated parmesan, and said "You're not going to put all that on the bread are you?"  Just watch I said.....

He tried it and liked it.  I thought the flavours reminded me of the cheese toast at Sizzler!

I baked this  with Italian herbs (don't have pizza topping).  DD loves this, she has her third one now  :D

Made this bread tonight. 
I thought perhaps it needed a bit more salt (only because I forgot to put the salt in whilst making!!).  Even without the salt it made a perfect loaf and was very tasty (I think my partner had 3 slices  :)).
