Title: Varoma cooked Potato Casserole
Post by: judydawn on September 17, 2010, 11:09:15 am

Name of Recipe: Varoma Cooked Potato Casserole
Number of People: 3 serves
Ingredients:
550g potatoes.  Peel and slice 1/2 cm thick.
1 litre boiling water
1 tblspns fried, dried onions - bought these in an Indian supermarket.
100mls cream mixed with 1 tspn cornflour and 1 tspn tikka paste

Preparation:
Place the boiling water into the TM bowl.
Place overlapping slices of potato into the varoma dish, put into place and cook 15 mins/varoma temp/speed 3.
Place a layer of the partly cooked slices into a casserole dish that will fit into the varoma tray (I used the lid of an oblong casserole dish). Sprinkle the fried, dried onions  & S & P to taste over the top, add the remaining slices and pour the flavoured cream over the top. No need to cover the dish.
Cook 20 mins/varoma temp/speed 3.

Tips/Hints:
I used flavours to compliment the Salmon Tikka dinner recipe from the Indian cookbook but you could omit the onions and tikka paste and add some sauteed bacon and onions and sprinkle cheese on top. The fried dried onions are really worth seeking out though and would save the trouble of cooking some for yourself. By pre-steaming the potato, this cut the total cooking time down by half at least as I had previously tried making this dish with raw potato in the varoma dish - it took forever to cook. Whilst the potato is pre-steaming, you can get on with preparation for  the rest of the meal and it is worth the extra effort in the long run.
For a larger serving sized casserole you would have to cook it in the varoma bowl.
The photo is of the leftovers.

No never TMXer.  I went with Trudy, she really knows her way around one of those shops. The sizes and prices are really interesting compared to the small packets in our supermarkets, so much more for your money.

made the tikka paste yesterday, but whew was it hot or what  :o :o :o I put the amount of dried chillies in that the recipe called for, but they were the tiny potent ones - and blew everyones head off! shame I still have such a large jar left and probably should only use half a teaspoon for this...

Lovely recipe Judy.Yesterday I grilled too much bacon, so I used the leftovers to make the alternative recipe of bacon, dried onion and cheese.I served it with roast chicken and steamed vegetables.DH and DS thought it delicious, next on my list is to try your Parmesan Potatoes. ;)
