Make Milk and Honey Bread, add a good handful of any dried fruit and a couple of good grates of orange rind, during the last min. of kneading.. Could add a pinch of spice if desired. I added a handful of sultanas and the orange rind and it produced a nice light fruit bread.

You must be reading my mind.. I "tried" to make a fruit loaf on Friday, but not that happy with it.. I'll try yours.

I used this fruit bread recipe today. I used 100g wheat grain, 360g flour. For fruit I soaked some dried figs and apricots in hot water until they were soft, cut the figs in quarters and the apricots in half. Drained and patted with paper towel to remove excess water. I didn't add any peel or sultanas - forgot!
I let the initial dough rise, then added the fruit by hand. Then pushed almonds into the bottom and sides of the loaf, put it in the tin, and let rise again. Spray oven and loaf with water. Cooked for about 25 minutes.
Came out lovely.
There is a fantastic bread stall at the local growers market that has an awesome fruit bread that I was trying the recreate. HIs crumb is a lot drier, but I was really please with my loaf and it will make lovely toast!

Made this last night with dried apricots and cinnamon sprinkled on the top before baking.
It took a long time to rise, i think the cold milk was what slowed it down. Next time i will be warming the milk up before adding it to thermie!

Just wondering if I could make these into fruit rolls, can anyone see a problems doing the rolls. I have the dough sitting waiting for it to rise as I type.

Have to add, I took some of these fruit rolls into work tonight for some of the girls, and they loved them. Will be making these again really soon.
