Instead of 300g zucchini, made it 180g of zucchini and 120g of carrot. Need to increase to speed 6-7 to grate.
Also reduce the sugar to 300g, sweet enough for my taste.
Using Rice Bran Oil and work really well.
Before serving, I toasted it in sandwich press, yumm...

Thanks for the tips. Like the idea of 50:50 carrot:zucchini - may help firm it up?

I loved this loaf, just as per recipe. It wasn't the cheapest, containing walnuts, grapeseed oil and three eggs, but it was a delicious, light loaf-cake that made plenty.
I was wondering about such a large amount of raw sugar, but the taste was not unduly sweet. For some reason the walnuts and zucchini balanced it out.
I found the mixture was not close to being finished in the ten seconds indicated for adding the last lot of ingredients, but overall, the recipe was a good guide.
The cracking of the walnuts was the most time-consuming aspect of the preparation of this recipe, but that effort just made the cooked loaves all the more appreciated.
