I use this basic recipe for Pizza dough. Today I made up the basic recipe and used some to make 3 pizzas and the rest to make Pizza scrolls. They are slightly under cooked as I will reheat for lunch tomorrow. Good use for left over dough and pizza topping.

Thanks for this idea - I kept the footy crowd happy yesterday with Pizza Scrolls and Cinnamon Scrolls using this recipe.
First I made up the 'Plain White Rolls - No Fuss' dough. It was very, very simple and easy to work with.
For the batch I was going to make the cinnamon scrolls with I used an extra teaspoon of sugar in the dough but probably not really necessary.
Rolled each batch out into a large rectangle and spread with toppings before rolling up then cutting with a large, sharp knife. (I roll out my bread on a large silicon mat; makes the rolling up heaps easier.) As has been suggested elsewhere it is important to keep the rolls tight if you can.
For the pizza scrolls I spread with some leftover tomato pizza base sauce - use sparingly so they don't get too sloppy - and for the remainder of the filling I simply threw some loosely chopped spring onions, chunks of ham and chunks of cheddar cheese into the TM and chopped/grated the lot altogether then sprinkled over the bread. SO EASY. You could use anything. For the cinnamon scrolls I just sprinkled liberally with brown sugar and cinnamon.
Delicious - plus I now have a reputation for producing amazing food - so thanks for the recipe and concept ;D

Well done Patsy. They had to make you look a star - how many people without a TMX would go to the trouble of whipping these up. How long does it take to cook a batch of scrolls?

As for the time taken... the dough itself is extremely simple and quick, kneads in 2 mins, and I just waited until the dough had doubled in size before kneading out. From the time kneading out onwards, about ten minutes? Oven about 25 mins.

patsycate, congrats on such a good result. ;D I find the same recipe makes a lovely crisp pizza crust. I usually make a pile and freeze it.

Do you mean make a pile of dough and freeze it or make a pile of pizza bases and freeze them Chookie :P :P :-* :-*

JD, i make the dough and freeze it. I make small pizzas, about the size of a bread and butter plate, so divide the dough into 200g balls and this gives me 2/3 pizzas. I freeze the balls separately, then remove them from the freezer and let them rise/ come to room temperature and then flatten and roll with pin and stretch by hand. Before I put the filling on, I slide the base on to baking paper, then topping on. The paper makes it easy to slide into the oven. After about 5 mins, I pull the paper out, to allow the base to cook. The grand kids like to make their own topping and also to help roll the base.

Glad you like this basic recipe. Always turns out OK, even when you fiddle with the ingredients. I use it for small dinner rolls(12) from a mix, bread sticks (2) Hot dog rolls (4), large rolls( 6 to 8) from mix, Pizza dough , freeze in suitable lots after first rise. Loaf in tin, cob on tray and pipe loaf in pipe loaf tin. I sometimes flatten it out and spread over with filling and roll up like swiss roll and cut in slices or overlap like pull apart bread. If I get carried away with the filling(too much), I turn it over onto an oven tray and give the botton 5/10 extra mins. to make sure the base is cooked.
It can be made with whole wheat flour or a mix or you can sub. 20g for flour with seeds or soaked grain.
I makeup a grain mix that I keep in a tin and when I get a bit tired of what I'm doing, I add a bit to the mix or roll the rolls in it. I think I have posted it on the Forum, if not it is on my blog. "Grain Mix for Bread Topping' 2og. LSA also adds a bit of healthy variety. Have fun and save money ;D ;D ;D ;D
