Title: Eggs en cocotte with spinach - Full Steam Ahead (and on forum)

Recipe Name:  Eggs en cocotte with spinach

Tweaks:
1) Next time I'd use 20g butter.  Once the spinach has been cooked, I used a pastry brush to use the butter from the spinach to grease the moulds.

Hints: I used glass ramekins - the eggs were beautifully cooked in the 8 minutes - yolks nice and thick and warm, not fully set.
This would be a perfect light dinner after a BBQ lunch using up the leftover salads as side dishes.

Thanks Cathy for bumping this, as it looks delicious.I have been looking at Depome's eggs in Cocotte as well.These sort of recipes appeal to my family. :)

My kids love this recipe too. We usually add some ham or bacon as an extra.

Thanks for the review CB79 - I love eggs this way with either spinach (or ham and cream - to use up leftovers)  in with them.
