Title: Mom's Easy Kebap-Shop Soup (with photo)

It is a very tasty and ezogelin-like soup which mom cooks very often and she calls it as kebap shop soup.
In Turkish cuisine soup has an important place. It is served as first dish prior to the main dish.



Mom's Easy Kebap-Shop Soup:

Ingredients:
150g onions, quartered
180g red lentils, washed and drained
1200g water
30g Thermomix vegetable or meat stock
30g olive oil
25g tomato paste
Salt (if needed)
1 tbsp dried mint


Preparation:
    * Chop onion for 5 seconds on Speed 5. Clean down the sides with Spatula
    * Add tomato paste and oil. Saute for 4 minutes at 100°C on Speed 1
    * Add lentils, water and TM stock. Cook for 35-40 minutes at 100°C on Speed 1
    * Add mint and salt if needed. Blend for 30 seconds on Speed 10

bluesed - Made this and it was very tasty with fresh mint(frozen fresh mint).
 It turned out very orange and looked very appetizing. It was more orange looking but I also used a fresh made sofrito instead of tomato paste and a homemade vegetable stock.

Denzelmum - Only have 120g of red lentil, topped it up with Puy lentil, so decided to cook it a bit longer.  Another tweak is using fresh mint from the backyard.  The colour is more greenish.  Lovely soup,  next time will make it thicker by reducing the water.

Not the most appealing colour - but sure it tastes good with the mint  :-*  :-* :-*

Don't have dried mint.  Is it possible to use fresh mint?  How much will be needed?  Thank you.

Denzelmum I've never made it with fresh mint. We always use dried mint
Fresh mint has a stonger taste and it might make it bitter in case of overuse I guess
You can try to add a few leaves of mint before you blend it and then check how it tastes and then add some more if needed

Im sure fresh mint would be even better then dried. I suggest instead of blending the mint in the soup to take some leaves, roll them together and cut them into thin strips and sprinkle over the dish right before you serve it. Might also drizzle some olive oil on top of the soup to give it a more appealing look.

Might try to cook this later today and make a picture

Everybody in my family liked it a lot and my 2 years old son ate a whole bowl similar size to the one on the picture :)

Thanks a lot for the feedback but mostly for the picture!! Yours could give a much better idea and also impression! ;)
It is supposed to look orange indeed! Unfortunately it was me who took that terrible photo
I am gonna fix it soon when I remake it
