Banana Cake with cream cheese frosting – with photo
Adapted from a recipe I have made many times – original original recipe Good Taste - September 2007 p 22, posted on www.taste.com.au
Ingredients
125g butter
220g castor sugar
2 large overripe bananas
2 eggs
1 teasp vanilla essence
100ml buttermilk or make your own 1 tbsp vinegar + 1 cup of milk
225g SR flour
½ teasp bicarb soda
Cream Cheese Frosting
125g cream cheese
50g butter
230g icing sugar
2 teasp buttermilk
Preparation
Set oven 180°C. Line or grease cake tin – (while I used deep slice tray today the cake works well in a square tin, muffin tin or round cake pan. The banans today were a little on the small side so I didn't have the usual quantity of mixture).
Mash banana in TMX 20sec speed 5-6. Add butter, sugar, eggs and vanilla to TMX with banana – mix together 20-30 sec speed 6. Scrape down sides of bowl
Add buttermilk, flour and bicarb soda, process 20 sec – speed 5- try not to overmix.
Pour mixture into tin, bump or shake the tin to settle mixture.
Bake 50 mins or until skewer comes out clean when inserted into cake.
Ice with cream cheese frosting when cake is cool
Cream cheese frosting
Add all ingredients to TMX and mix 30-40 sec – speed 6 (scraping down sides of bowl after 20sec)

I have also cooked it as a tray bake in a fan oven at 160oC for 30 minutes.
maddy - Yummy. I used 3 small banana's, quick buttermilk (1 TBSP vinegar in 1 cup of milk), and cooked in a lamington pan for 40 mins. (like a banana slice). Thanks for posting it Johnro.......it's lovely.
This mixture is also great for cupcakes. Baked on 175oC for 20 minutes. Made 18 cupcakes.
Made into mini cakes in mini muffin pans, for Hubby's afternoon tea at cricket.....dropped sugar to 190g also and baked for 15 minutes. Made 43.
For the icing....
I increased icing sugar to 250g
decreased butter to 25 g
125g cream cheese & 2 tsp. buttermilk.
Made icing first, and popped in fridge. When cakes out the oven to cool, I took icing out fridge, and it was then perfect consistency for piping.

Well I can confirm that you can double this recipe successfully. I thought this cake would fit in the tmx bowl. It did, although as it was almost up to capacity, it did take a bit longer to mix the flour in, although I still tried to do it as quickly as possible and not overmix. My bananas were medium to largish in size, so I used 5, everything else I just doubled. It made a slab tin size and it rose up quite a bit out of the tin. I double lined the tin, in case the edges dried out before the middle cooked but it still only took about 50 minutes to bake.
CP - Can I say that the Banana Cake is absolutely delightful and the more the bananas are black the sugary they are - hence sweeter!

85model - YUM!!!! AAA+++ recipe this went well and smells divine!! Wait till DH gets home it will be devoured completely!! well done !!
spektor - Delicious! Certainly satisfies any sweet craving. It was the first cake I have made from scratch in many many years.
Bonsai - Made this as cupcakes and didn't have cream cheese so used creme fraiche. I put the icing in a piping bag in the fridge overnight as cakes were still warm at bed time. Super easy to ice before work and my team made short work of them. A great recipe.
Denzelmum - Baked this yesterday, with yoghurt instead of buttermilk and no icing. Half of the cake is gone in one evening.
Brumington - Pre TMX days this was my favorite banana cake recipe. It produces a really moist tasty cake. I loved the ease at making it in the TMX. It was whipped up in no time at all. I add cocoa to the frosting which gives it a nice flavour.
Nighteyes Fitz - Wow! So yum. Just like the Sara Lee cake only BETTER!! I made it with whole meal flour and it is still so delicious. This is seriously THE BEST banana cake I have ever made. I make it all the time. I get requests to bring it to afternoon teas, make it for cake stalls and my husband begs me to make it for work. He took it to a board games meeting yesterday and he came home with an empty plate. I just love it!
SuzieG - Made this as cupcakes, reduced sugar and baked for 20 mins. Made 24. Absolutely delightful, devoured by work colleagues in one day! Will become a regular for sure thank you!!
dc - let me say it is the best banana cake I have had. Could reduce the sugar a little but that's only because I try and use as little sugar as possible. Very yummy!!!

i'm looking for a good icing for a 3 year olds birthday cake and think i might give this a go (with a choc cake base though/torta caprese or zucchini brownies). would it work ok with a drop of blue colouring if i want to get a baby blue effect?

Food colouring works in playdough so can't see why it wouldn't work with cream cheese frosting ladybird. I even coloured some chocolate green and apparently you are supposed to use some sort of powder when colouring chocolate - a few drops worked for me though.

Pleased that you all have enjoyed this banana cake, a belated thank you and my apologies for not responding earlier - the school term is so frantic and quite a frustrating 2011. (We now have to meet targets re failures in classes - no accounting for the lack of motivation in students coupled with unbelievable laziness and refusal to submit assessment- apologies for my whinge!!!!!) ??? ???

Poor you johnro. We have had a new school built about 1½ km from us. We can hear the sirens. At first I wasn't impressed as I really didn't want to be anywhere near a school. Now when I hear them I think "thank goodness, no more for me!"
I can just imagine how you feel and you are so correct, some children were not meant to be good at 'readin' writin' and 'rithmatic.' I'm sure we can all remember when we went to school not everyone was 'into' school.

This lovely forum friends has nothing to do with banana cake but does focus on my last whinge so here goes. Have just finished marking term papers for year 11 - after 9 weeks of focused work, a unit booklet so full of information and a thorough revision sheet only just over 50% of the cohort achieved a pass or higher...................ggrrrrrrrrrrrr!!!!!!!! >:( :-\ :-\ Thanks for listening!!!! :(

Remember johnro no matter how much work you put in some children are still not going to make it. Their performance does not reflect on you. No matter what anyone says. (send them over to me and I'll sort 'em out). It can be extremely hard for teachers with some cohorts.
Sending my caring thoughts to you and YIPPEE I don't have to do it anymore. In fact I am seriously thinking of not renewing my teaching license.

my son is one of those kids that is not suited to a school environment. We have tried so hard with him. He followed 2 x older (extemely highly performing) sisters who went through a public co-ed school education and then went on to elite girls private school education to captaincy levels, however he appeared to be not suited at all even from Year 1 and we spent a lot of money whiling away those years in a very nurturing and expensive private school in order to regain his self confidence lost in the public school education in Year 1 (can you believe it!!). So different to the girls, and yes he despises being compared to them. Despite what my DH says, I think that he is of a very entrepreneurial nature (and this has been backed up by past teachers comments) and he will surprise DH (but not me) so l always begged him to leave him alone, give him a break, and he will be fine as I feel and mum ever hopeful ) he is very much like my DH nature although both will not admit to it. In some ways (this has been a negative and a positive) as DH is an ex-teacher and has seen a lot of kids fail when they are not the "normal run of the mill" kid, and has experienced different classroom situations, and doesn't want him to end up like the rest who feel very frustrated when in a classroom situation. and cannot keep up with the other kids. After 18 years, I feel we have always done our best, and given him as equal opportunity as his sisters and now the rest is up to him. I am really proud that my DS is a hard worker, is confident within himself, and for a 18yo boy has a 'sort of' picture planned as to where he is heading.
I will point out tho - and this is a food forum website, unrelated, and so will not elaborate - that if your child is experiencing difficulty in the education system or socialising in any way that you need to seek help as soon as possible. Do not give up on your child (for their sake).
Hmnn now I have just re-looked at the topic heading and apologise for transgressing folks....eek sorry!
Can I say that the Banana Cake is absolutely delightful :-) and the more the bananas are black the sugary they are - hence sweeter!

Well said CP63. we just have to be aware of what suits our children. Our very clever DS1 was failing yr 11 and destined to not get an ATAR score high enough to go to Uni. The failing was his own doing and certainly not the teachers or school. Instead of yr 12(at his request) we have switched him to an Institute of Technology to do a University Preparatory course which he is breezing through. He will get an automatic placement in the degree of his choice next year. My point is that there are many options available and we just have to find the right one.

Well said everyone as we have also travelled that path also and just like making a cake you have to find the recipe that fits your child and your family - banana cake just happens to be a favourite of ours ;)

Thank you lovelies for all support and comments - after my comments above you would find it hard to believe that I enjoy what I do in the classroom, especially the dynamics which exist in the particular group that did so miserably on formal testing. I believe that parenting is a far more emotionally taxing role than teaching! Thanks for your ears - so pleased the banana cake continues to be enjoyed (bananas in Qld cost an arm and a leg at present!). Cheers

I know what you mean about the cost of bananas! I have a couple in the freezer that I am saving to make this cake down the track. Bananas have hit $13kg here in Tassie and I just can't afford them. :'(

I bought 6.5kg of bananas from coles for $8, 38 huge bananas, they are all sitting in my freezer waiting for banana cake!! haha was such a bargain i couldnt not buy them! :D :D
they were perfect to, maybe a couple of small blemishes on the outside, but perfect inside, yum!!

wow that was lucky lucky ;D i saw them at C***s supermarket today (I have to stop advertising their name) and they were $12.60/kg :o (fortunately I squirrelled a couple of kgs away when they were cheap -- but I must use them)

Hi all. I need to make cakes for 50 people for afternoon tea next weekend. I will make some bimby chocolate cake, but this is my son's all time favourite so I just wondered if anyone had tried doubling it. I'd like to make enough for a slab type tin. Has anyone doubled it? Does it fit in the tmx? and still taste as gorgeous? Would appreciate feedback!

Can you compare the quantities of the Bimby Chocolate cake and this one Lellyj - I had a quick look and I'm pretty sure this one could be doubled but don't take my word for it as I don't make that many cakes :-))

I double lined the tin, incase the edges dried out before the middle cooked, but it still only took about 50 minutes to bake. Unfortunately, I didn't get a pic before it was devoured by hungry hikers and their families. I thought people might like to know that you can succesfully double this fabulous cake mix, because sometimes doubling doesn't work with cakes, I find.

Thanks Judy, no one in my family is a smoothie fan (with the exception of me and my green smoothies) and I'm not a fan of bananas unless they are in banana cake - a no win situation for the bananas in the freezer. I also thought of the banana ice cream but they are only interested in eating them if they have just turned yellow. We just don't really eat enough in our house.

I had only one large smelly banana but found some long dead but not smelly coconut flaky bits to toss in. May even make the icing if I can find some icing sugar. Going hunting in the pantry.

Found some ancient icing sugar and tossed remaining coconut shreds in with a bit of lemon juice. I am hoping my wonderful Marie the cleaning wonder will take half and DH can have the rest when he gets back from the dentist, well not all at once.
