Hi All - we will be celebrating next my son's Communion next Sunday and hosting lunch afterwards. I'm looking for some ideas to serve (cold) with roast chickens that I can prepare maybe on Saturday afternoon. Expecting about 20 for lunch.

no links to recipes I'm afraid but I'd do a rice salad and potato salad the day before. In the morning whip up a big coleslaw'y type salad (we chuck in kind of whatever in the way of red/white cabbage, carrot, beans, apple, any hardish veg) and a green salad (no tmx).

Another great one is a carrot and grape salad - make your homemade mayo in the tmx, remove to a bowl; grate up a bunch of carrots & some celery in the tmx, and and roughly chop up some walnuts or pecans, then stir in the mayo and a few handfuls of seedless green grapes. It's yummy!! ;D (Probably would do it Sunday morning though, except the mayo, so it's fresh.)

Check this one out Sylvia - it makes heaps and always goes down well at parties. There are 2 recipes here and with my version I have made it well ahead of time and only add the peanuts, fried noodles and dressing at the last minute to prevent it going soggy. I usually do the chopping by hand though and haven't used the TMX.

I can highly recommend the curried pasta salad - AND it is even better if you make it the day before. My family love it and it also makes heaps :D :D

well, there are the tmx staples - beetroot salad and coleslaw. then there's also the morrocan carrot salad from the vegetarian cookbook...in fact, there's a whole pile of different salads in the vegetarian cookbook. for a vegetable something, you could also do the vegetable curry from the varoma cookbook or the warm chicken salad (without the chicken - there is a vegetarian version) from the varoma demo. you don't have to serve them warm - just toss before serving.
if you plan things well, you could one salad after another without the need to do them on saturday. they'd only take 4 seconds each it chop up.

With summer fast approaching this is a great thread as I'm always chasing salad ideas to keep things interesting. Thanks everyone.
