Yum, yum, yum, yum - man oh man, love the recipes in this book. My tastebuds chuck a party each time l try something new. 5 out of 5 for this one.

I've just dug this book out and can't wait to try it.
Question......is 1 Tbsp. curry quite hot in this recipe with everything else in there?
I usually use 2 tsp. at most in things, and wondered if I should just stick to that :-\

Yes I would stick to what you normally use Maddy. I have quite hot powder and only use 1/2 tsp in most dishes (including this). :)

Well I agree, it was yummy!
I did marinate and then toss some pork fillet in cornflour, cooked and added it on top (keep the man happy in seeing some meat ;) )

I did double the couscous, and apple, and used 2 tsp. curry (keens). That was enough heat for us.
When I make it again, I will stick to recipe quantities but use 1 tsp. curry. Didn't realise how filling couscous was ;)

Here you go CC
150g couscous
300ml boiling water
small handful of fresh mint
50g butter
1 Tbsp. good quality curry powder
1 medium green apple, cored
3 spring onions, washed and thinly sliced
1 tsp. sea salt
1 mc roasted pine nuts
Place couscous into thermoserve bowl. Pour 300 ml. boiling water over the couscous. Place the lid on and let stand for 10 minutes.
Add mint to TM bowl and chop for 3 seconds, speed 6. Set aside
Add butter and curry powder to bowl and cook for 3 minutes, 100c, speed 2.
Add apple and chop for 3 seconds, speed 5.
Cook for 3 minutes, 100c, Reverse speed 2.
Tip apple mixture on top of the couscous. Add spring onions, salt, roasted pine nuts and mint. Carefully mix through and fluff up the couscous with a fork.

CC......I forgot to mention REVERSE speed 2, when cooking the apple......hope you see it :P

Just made this again tonight. I find the mint has a "calming" effect on the curry powder, so don't mind the tbs of curry. Glad my review got you to try it!

I made this yesterday, really enjoyed it. I love savoury/sweet salads. The only thing I did add to it was a handful of craisins and used pearl cous cous instead of regular. I made it late arvo and had it as a side to hamburgers (ill post that recipe when I get the chance) By the time I got to eat it the moisture was completely absorbed but still delicious. Having left overs today with some varoma steamed chicken. ;D
