Hi everyone,
My husband keeps asking me to make him some energy bars or something along those lines. Basically something healthy to snack on instead of eating crap.
I've had a look as best I can. I'm still not very savvy with the forum. So far I haven't been able to find anything. ???
Does anyone have any good recipes they could recommend.

HAven't yet converted it for a TMX, but here is my no cook muesli bar. I LOVE it! It's very filling too.
Super Muesli Bars
1 Cup rolled oats
½ cup wheatgerm
½ cup sunflower seeds
¼ cup shredded coconut
½ cup sesame seeds
¼ dried apricots, chopped
50g butter or ¼ cup vege oil
½ cup honey
½ cup peanut paste or tahini
Under the grill or in a pan, toast, one at a time, the rolled oats, then wheatgerm, sesame seeds, sunflower seeds and coconut till browned. Combine all toasted ingredients in a bowl and mix. Run the apricots under hot water and then chop finely. Add to dry ingredients. Combine tahini, oil and honey in a pan. Bring to the boil, while stirring. Reduce heat and cook until toffee like. Combine all ingredients and mix well, work quickly. Press into a greased 20cm tin. Leave to cool. Slice.

I made the super muesli bars last night. Yummo!
When it says to work quickly, you really have to but a way to give yourself a bit more play time to press it into the tin, I poured boiling water on a spoon and used the back of it to smooth the mixure and press it in. Made life much easier.
Next time, I'm going to add some dates and craisins in as well. A definite winner.
