I'm loving sorbet at the moment but am eating too much, so would love some recipes with less sugar or even no sugar? I was wondering how it would go just blending fruit and ice?

I never use the amount of sugar that's in the recipe in the book - usually I use about 80g of Rapadura (http://quirkycooking.blogspot.com/2009/07/rapadura-sucanat-muscavado-turbinado.html) to a full bowl of ice (I don't measure the ice). If it's a sweet fruit, (eg. mango) you can use a pinch or two of stevia powder instead. Or you can use about 40g raw sugar/Rapadura and a pinch of stevia. Or just use all frozen fruit and a little honey or agave syrup, and make fruity dream! That's what we like to do. :)

For a lot of my sorbets I don't use any sugar at all, it depends on what the fruit is. Last night we had banana, mango flesh and fresh pineapple and I didn't use any sugar. It was lovely. I find I need to always use a little for strawberries.

I make the "Spumone Al Caffe (Ice Coffee)" in the drinks section of EDC, but use much less coffee and sugar. If you freeze the milk or just add more ice, it's very thick like sorbet.
