Title: Making marzipan

I've just blanched the almonds to make some marzipan (from Festive book) and I've found that most of them look brownish as though they have been toasted. Did this happen to anyone else? My blanched almonds are usually white as I do them without the TMX. The TMX is much easier and quicker and I'll still be using them.

I've made the marzipan and it is a gold colour and tastes so very nice. I've used it for my fruit mince tarts and now will use it for my stollen as it says golden marzipan and mine is sure golden. If I have any remainder I'll just cook it as it's ever so nice.

We made a stollen last year.  DH got challenged by a chef mate to make one with TMX.  Turned out really good. We should do one for christmas I think.  We made the marzipan from the UK thermomix site.

Cookie, I had the same thing happen with my almonds. Still tasted fine and like yours, my marzipan was golden.

it's a really nice marzipan too. I generally don't like marzipan .. this one I keep eating! My poor hips  :o :o

It is yummy isn't it? I never liked the goo you bought but this is beautiful. I'll bake some as stars today or tomorrow after I've made the stollen.

I make it and keep it on hand all the time - it keeps nicely in the fridge.

I roll it out, cut a circle the same size as a cake layer and put it between layers, along with raspberry or cherry jam in chocolate layer cakes.  It is a hidden gem that always gets rave reviews.   The complex combination of flavors are very complimentary to each other.

In this case the total is greater than the sum of the parts.
