I have made sushi a few tmx to cook the rice - I just followed the EDC rice cooking directions then added the rice vinegar and a little sugar and salt and it was great!

I'm going to give achookwomans recipe ago. I make the sushi vinegar in the TM and it's great. I want to be able to do the sushi rice in the bowl and at the same time steam some beaten eggs for in the sushi. Last time I made it I did the rice in the bowl, then put in the ingredients for the sushi vinegar and hoped it would mix. Unfortunately the rice was like mush and my family didn't enjoy their much loved sushi much that night.

Hey girls,
Its cauliflower sheep !! pretty clever huh? can't claim any credit though! I tried to post but its too large.

Sushi rice needs quick fanning and spreading out to cool quickly I think after you add the vinegar?? That's what I always do !

Hey fundj
I work in a kitchen store and bamboo is really popular at the moment.....take a look at the www.maxwellwilliams.com.au website as you can order direct from them ! :) :) It is food safe, but I don't think you can put it in the dishwasher :)

I made this for lunch today.  I was really impressed with how the rice turned out.  The grains were all whole and not at all mushy.

Will make my sushi rice in the TMX from now on.

Denzelmum that looks like an interesting mold.  Is it much quicker than spreading it all out?  I love sushi, but for some reason my nori has a tendancy to go chewy.  When I buy sushi the nori almost seems to melt in your mouth.  I can't work out hwat I do differently.  I love japanese food but am now a little worried about eating nori that comes from Japan or China after their nuclear meltdown as they did pump the water back out to sea.  Am I being to paranoid?

earth mumma I find if I individually wrap each roll  in glad wrap for 1 hour before eating helps soften them

earth mumma, I don't think you are being paranoid.  I don't think the contaminated products will be here yet, but it may not be long until they hit our shelves (if they get through the health checking and testing processes).  It is a huge worry.

I'm the furthest thing from a scientist you can get, but is there not something about iodine (as in sea weeds) retaining dangerous levels of radioactive substances for a very, very, very long time?

I know there are people on this forum who will know more about this than me and I do so hope I am wrong and not scare-mongering, as so many people rely on sea weed based products in their diet, so my fingers are crossed that I will be told that I am wrong.

(I actually thought a long time before posting this as it could cause unnecessary anxiety, but I guess sometimes you have to try to do take what you think is the wisest action.  As I said, I hope like mad that I am wrong and look forward to being contradicted in no uncertain terms).

Marina I think you are right in terms of it not hitting shelves as yet bbut I think it is a real concern too  :( :'(

Denzelmum, please tell me about this mold?

So do you not have to spread out the rice?
My kids love sushi and I do the good mum thing and make it for them, though now I tend to do it when they are home so they can spread the rice out as I hate the feeling of the rice. (don't ask I'm kind of odd, lol).

If I didn't have to touch the rice I'd make it heaps, lol. Don't mind rolling or anything else, just the rice bit.

Yes agree it is a concern re Japanese products.

You need a rice paddle to spread the rice with Zan.  I also can't stand the feel of rice stuck to my hands so use one of these and it makes spreading the rice so much easier.

If you dip your fingers in water it makes it much easier.
But I use one of these - www.sushezi.com

Hi Zan, here's the website http://www.sushiexpress.com.au/ they have video on demo too...  I move the rice from TMX bowl to slice contatiner so it's wide and fan it a bit, then put it in the mold.  Hope it help.

I found this way is very quick and less mess, even little one can help too.  The only thing it's not round, but more squarish.

Thanks guys.
Don't think the molds are the answer to my sensory issues.
I actually like the rolling side of things. But just not the rice, lol (and yes I do wet my fingers, I just have major sensory issues)

Think I will try the rice paddle - do they sell them in asian supermarkets?

What about a really large nozzle on an icing piping bag?

No, cancel that idea, it will probably squish the rice up too much.  Bad idea, not thinking at the time I posted it!

Hi Sushi lovers - is it possible to buy brown sushi rice in Australia?  I've never seen it, don't even know it it exists anywhere.  I think ordinary brown rice is medium grain and not sticky enough for sushi, not that I've ever tried.

I saw at our local sushi place they are now offering a choice of white or brown rice.  However, it is not as brown as normal brown rice.

I've successfully used 1 part ordinary brown rice to 3 parts sushi rice.  I steam it in the basket for 25 minutes.

On Rainbow Recipes book, p.51 - using normal brown rice for making sushi.  This is vegan cook book, however you can tweak it.  The mothod is a bit different from Chookie's and I haven't tried it yet.
