Title: Dairy Free Icecream

Does anyone have a recipe for DF icecream?  I am craving icecream, but can't eat it atm while breastfeeding DD2.  She may grow out of the intolerance, but I may also have a another year or more with no icecream YIKES!!

Pippa can you have lactose free or does it need to be dairy free? If you can have lactose free I know a customer of mine makes the edc ice-cream with lactose free milk and cream.

There are lots of options.

 Make a soya milk or rice milk custard freeze it into ice cubes and make the frozen custard instant ice-cream
Freeze soya milk or rice milk and blitz with cocoa or fruit to make instant ice-cream like the instant blueberry ice-cream.

I haven't tried this but could you make the sorbet recipe with frozen coconut milk instead of ice? I would imagine it would have that creamy icecreaminess. It would be lovely with mango.

We can't have coconut milk either  :( but the rice milk custard might be ok.  I don't know which part of the milk she can't tolerate, but given that she is likely to grow out of it, my priority is to challenge the foods we are likely to want more at this age such as amines and sals etc IYKWIM  I am also avoiding soy as it is so similar to dairy intolerance-wise.

Our favourite, quick, df ice-creams are ones made either with frozen bananas (like the chocolate-nut one (http://quirkycooking.blogspot.com/2010/02/chocolate-banana-nut-ice-cream.html), or the Rapadura toffee one (http://quirkycooking.blogspot.com/2010/05/toffee-pecan-crunch-ice-cream-dairy.html)), or just frozen bananas and a teaspoon of vanilla bean paste.  And we also love fruity dream (http://quirkycooking.blogspot.com/2010/02/berry-foam.html) - it's so creamy and delicious!  When I make fruity dream, I use 600g frozen fruit (berries, nectarines, mangoes, peaches, cherries...), some honey to taste (or rapadura) and two egg whites, and beat it for up to 5 minutes - it makes it so light and fluffy!  :)

Thanks quirkycooking, we are failsafe and DF so banana and most other fruits are out too.  I should have been more specific in my original request.  Sorry!

What I really need is a DF icecream free made on rice milk.  The only other addition could be pears.  Egg is ok too. No honey, chocolate, banana.  Maple syrup is ok as is golden syrup.

I have found a couple of recipes that I will try out and see if I can make them TMX friendly - I'll post them if I make them work  :)

I was going to suggest there are a few rice milk based ice creams in sue dengates book that should convert :)

How is it similar to dairy? Just wondering, as most people I know who are dairy intolerant use soy milk without problems. I use it because I don't like the taste of milk in my tea and coffee.

With ds's dairy allergy, my pead said there is a 50/50 chance of having a soy allergy/intolerance, not so much that they are the same, but the are tending to go hand in hand these days. Making dairy avoidance a difficult task at times!

Jo, cashew nuts are failsafe if that helps the search ;)

oooh sounds interesting Jo.  Will wait with baited breath for that. Even before we were failsafe, I used to make a vegan lasagne with almond ricotta which was really delicious.  Can't wait to see what a cashew icecream tastes like

I'm pretty sure that the proteins are similar in soy and dairy.  From an intolerance stance, maybe they are not similar enough, but from an allergy standpoint, I am pretty sure that is the issue.  Can't find the info, but that is what I understood from our dietititian and gastro - could be wrong though!!
