Title: Not Quite Nigella's Caramelised Banana Ice-Cream
Post by: judydawn on January 10, 2011, 12:06:02 pm
Name of Recipe: Caramelised Banana Ice-Cream
Number of People: Depends on how much you give them but 6  serves maybe.
Ingredients:
50g butter
100g soft brown sugar
1 tblspn orange juice or apple juice (I used orange)
4 ripe bananas (I used 3 very large ones)
500mls cream
120g - 150g icing sugar (I used the lesser amount)

Preparation:
Preheat oven to 190oC. I did it in the weber.
Melt the butter in the TM bowl - sorry forgot to time it.  Just did it on 100o on speed 1 until it had almost all melted.
Add the sugar and orange juice and mix it until it all comes together - 20 sec/100o/speed 1. Remove from bowl and place in fridge to cool down slightly.
Slice the bananas 3cm thick and place in an ovenproof casserole dish.  Pour the caramel sauce over the bananas and bake for 25 minutes until soft.  I gave them a toss halfway through.
Strain the bananas, reserving the caramel to pour over the ice-cream at a later stage - or use it for something else.
Cool the bananas slightly then place in the fridge until completely cold.
Place the butterfly into the TM bowl, add the cream and whip until soft peaks form.  This will depend on the freshness of your cream, for me it was 25 seconds/speed 4 but keep an eye on it.
Add the icing sugar and the cooled caramelised bananas and mix for 10 sec/speed 4.
Place mixture into a metal shallow tin and into the freezer.
Every hour, remove the tin and stir the ice-cream with a fork to prevent ice crystals forming.  Do this a total of 3 times then leave to set completely.
Remove from freezer 20 minutes before you want to serve it.

I've got the grand-children here today so they were the taste testers for this latest batch of ice-cream.  It passed with flying colours with the eldest asking if I could give this recipe to her Mum. It certainly needed 20 minutes or more out of the freezer before serving.
Meagan, probably could do what you suggested but I thought I'd follow the recipe to a T for the first time.
Cookie, you have probably checked it out but for those of you with ice-cream machines the recipe is on the link of the blog.

I made a similar icecream from 'The Perfect Scoop.' The flavour of the cooked bananas is really delicious. This one only used milk in it.

It's a tiny bit icy, so perhaps next time I'll use cream.
