Ok so I am trying to replicate a pumpkin bread from my local bakery. I was going to chop the pumpkin speed 5 and then sauté it off in either a little oil or water till soft then add bread dough ingredient and knead and then prove knead prove and cook. Any suggestions would be appreciated. The other option was to just chop finely and add to dough without cooking it at all.
;D of course I bought the pumpkin before starting the healthy choices thread lol

Hi I would try roasting the pumpkin 1st with oil, the same amount you would add to the bread mix and then purée in the TM

Meagan, I think you would getter a better flavor if you roasted the pumpkin first. If you add mashed pumpkin, just follow a potato bread recipe. the raw pumpkin sounds interesting but I am not sure it would work. however might be worth a try. I will consult some experts and get back to you.

Thanks Chookie. The bread we buy from up the road looks to have small pieces of pumpkin in it.
