Title: Lemons, Lemons, and more Lemons

 :) Lemons are fantastic. I just need some more ideas please.
Today my Husband came home with a Carton of lemons and 2 doz eggs.

I was already baking this afternoon, so today I have made,
Anzac biscuits, chocolate brownies, scones, shortbread, and 6 batches of lemon butter.

Tomorrow i will keep making lemon butter, (till I run out of jars), lemon meringue pie, and whatever I can think of.
Any ideas would be most welcome, Thankyou.

PS. Marks on fruit and veges outside have no bearing on the taste or quality on the inside fruit, it comes off the same tree.

obbie,  try my Carrot and lemon Jam  and lemon and Apple spread, and Belgium Lemon Teacake.   As you can see I also love Lemon.   There is also lemon filling in the Lemon Feather Cake,  I good way to use the lemon butter.  Have fun.

I just love the lemonade from the EDC and have gone through quite a few lemons making that regularly.

Quarter them and take the skin off (and remove pips  ;)) and freeze the quarters to use when making sorbets.

preserve lemons (middle eastern way) as they are a great addition to a lot of casseroles and tagines - they charge a fortune for them in specialist delis!

Robyn, I have a recipe( not converted) for a lemon and coconut impossible pie. I got it on a fact sheet from Burkes Backyard many years ago.

60g butter
1/2 cup s.r flour
3/4 cup castor sugar
3/4 cup desiccated coconut
3 large eggs
11/2 cups milk
1/2 cup lemon juice
grated rind of 2 lemons

put all ingredients except milk into a mixing bowl and beat until combined with balloon whisk. Add milk and whisk in. Pour into greased tin (lamington tin or something suitable for a slice) & cook in a preheated (180 celcius) oven for 50-60 mins until golden brown & set. Test with a skewer in the centre, it should come out clean. Serve warm with ice cream.

Im not sure if anyone has posted anything similar as I haven't looked. It shouldn't be hard to convert cos I think it's pretty much chuck it all in!!

Ha ha thought there would be somewhere, I might have to try it myself, it's very yummy. I have a client that keeps me supplied with lemons!!!

My poor little lemon tree only has 1 lone lemon on. It took me 3½ years to convince DH when we built that I still needed a lemon tree.

Where we live it is pretty cold most of the year.   We planted our lemon trees ,3, next to a stone wall,  and give them plenty of water and chook poo.  WE are starting to get a good crop of lemons,  which is great as I use a lot in cooking.  cookie, I thought that in Perth it would be ideal.   maybe not the right type of lemon?

It's the same sort we had at our old place where it went very well. Here it is up on the top of a retaining wall. I think it is looking a lot happier at the mojment. I have actually written on the calendar in large letters 'fertilise lemon tree.'

CP63 I know exactly what you mean, it is supposed to be very good for all citrus trees. Sadly this is about 5 foot up. I guess I could get him a stool. :-\
