Title: Quick Zucchini Quiche

Quick Zucchini Quiche:
Number of People  6:
Ingredients:
Pastry for base. I used cream cheese pastry from this site
4 eggs
300ml milk
2 cups grated zucchini
1 cup grated cheese
1/4 cup grated parmesan
 1 small onion
1 clove garlic
1 large tomato, thinly sliced
1 tablespoon self raising flour


Preparation:
Prepare the pastry and blind bake for a short time.
Set oven to 1800.
Grate the cheeses and onion and garlic. I put them all together on speed 8 for about 10-15 seconds. Set aside.
Put the zucchini into the bowl in pieces and grate that, watch it so you don't get puree. Set aside on top of the cheeses and onion.
No need to wash the bowl. Add eggs and milk. 8 seconds speed 6.
Add zucchini and cheese mixture and flour with seasoning. Blend together.  :-: speed 5 for approx 5-10 seconds. Only until mixed.
Pour this over the pastry and arrange the sliced tomato on top.
Bake until set. 40-50 minutes.

Tips/Hints:

You could use cream in this instead of milk. This is delicious hot, but even nicer cold.

thanks cookie, lucky to be able to get a photo by the looks of it  :D this sort of weather its nice to have something like this with a bit of salad on the side.

You're right about just getting the photo CP63. This was just before we divided it for lunch.

Cookie, would this be okay in a dish without the pastry?  Would I have to add more flour to help it rise?

No pastry would be fine. I often make quiches with no pastry. It's quite a custardy type of quiche.
