Name of Recipe: Carrot and Cumin soup
Number of People: 4
Ingredients:
1 large onion - peeled and quartered
300 g carrots (weight doesn't have to be exact) washed and chopped into chunks
20 g olive oil
2 tsp cumin seeds
water (approx 600 g)
1 tbsp veg. stock concentrate
Preparation:
Chop the onions and oil at speed 5 for 5 secs
Add the cumin seeds and cook for 3 mins at Varoma speed 2
Add the carrots and chop at speed 5 for 5 secs
Add water to the 1 litre mark and stock concentrate
Cook at 100 for 12 minutes speed 2
Add 100 ml cold water and puree at speed 9 for 1 minute
I have also made this using half beetroot and half carrot. I had to cook it for a bit longer to make sure the beetroot was cooked. It tasted really good and the colour was wonderful.
tips/hints from members Everyone thought it was delicious.
CC - My soup didn't cook in the initial 12 minutes, probably my carrots were a little too chunky. Just added 3 more minutes and it was fine. The cumin adds a real warmth to the soup and it's not sweet like carrot and coriander soup.
DJ - Just put 100 ml milk instead of water before pureeing.
Amy - I had a bit of zucchini that needed using so I chucked that in too.

Thanks for the recipe. This looks really tasty ... and I love cumin, so I figure it must be a superb soup (somehow I think I will also adapt it for a pumpkin version as well). Will have to wait for winter before I make it though!

Hope you have a long wait ;) It's just beginning to be spring here and it will be good to start thinking about summer foods again

here here...im a bit sick of this cold wet weather althuogh this afternoon there is sunshine even if its still wet and muddy outside!..craving outdoor eating, cocktails, salads, sun and lots of fun!! :) :)

Glad you liked it CC - we had it for lunch today too, although I had to use a sweet potato as I didn't have enough carrots. Was OK but prefer the all carrot version

I thought I would bump this for all of the forum members who live in the Northern Hemisphere. ;D We're having a particularly cold snap here in the UK so made this today.A lovely soup.

I love the colour.
How do you think it would serve up chilled? Being summer a chilled soup would be a nice change.

Have way too many carrots in the fridge :-[ This is a good start to stock the freezer with some soup now the weather is getting cooler :)
