Fish with Caper Olive and Tomato Sauce

800g fish (bones removed)
50g onion (quartered)
50g celery stick (roughly chopped)
40g extra virgin olive oil
50g capers (washed and drained)
50g pitted green olives
100g white wine
350g tomato puree
Salt, pepper


    * Wash fish and wipe with paper towel. Brush with oil and place in Varoma Bowl and Tray
    * Chop onion and celery for 5 seconds on Speed 7. Scrape down the sides of TM Bowl with spatula
    * Add 30g oil and cook for 3 minutes at 100ºC on Speed 1
    * Add capers, olives and wine. Cook for 2 minutes at 100ºC on Reverse / Soft Speed
    * Get 2 tbsps of the sauce and mix it with 2 tbsps of tomato puree. Spread it on the fish. Season with salt and pepper

    * Add tomato puree, salt and pepper into the remaining sauce in TM Bowl. Place Varoma Bowl and Tray and cook for 10 minutes at Varoma Temperature on Reverse / Speed 1
    * Turn the fish. Continue to cook another 10 minutes at Varoma Temperature on Reverse / Speed 1
    * Transfer fish into serving dish, dress with some sauce


Afiyet olsun....


Note 1: During steaming if you feel any need add 50g of water

Note 2: You can use the remaining sauce as pasta sauce to go with spaghetti, linguine, gnocchi etc



It's adapted with a few changes from the recipe called Pesce Spada alla Ghiotta in Io e il Mio Bimby

Farfallina, Can I move in.  You must have the most amazingly varied and interesting menu in your house ! I can't vary things too much with the kids, they love their old favourites ! So I think I'll move in with you if you'll have me ?  Pleeeaasssseeeee !

Since we don't have any children yet and my husband is not picky at all, I have complete freedom to try whatever I like ;)

I used the remaining sauce as pasta sauce
I had gnocchi and I really liked it
I believe this sauce would be great also with spaghetti or linguine

Thank you Farfallina, I will give you some warning of when I'm coming lol ! It really does amaze me the variety of dishes you cook. Enjoy it while you can !  It's a lovely time when it's just you an your partner before kids.  We didn't have long enough, we met, got engaged then married and then had our first child within 2 years.  But we go married older so the biological clock was ticking away.  We now have 3 boys aged 6, 4 and 2.  It's wonderful but can be quite hectic at times and it turns your world upside down.  So enjoy yourself now !

I will take your words into account Debbie  ;)
I know that it becomes more complicated with kids
When we have friends for lunch or supper, we always prepare something different for the kids
You are right about biological clock. I'd better hurry! ;)
