Name of Recipe:Peanut butter cookies
Number of People:
Ingredients:
290 g peanut butter
230g sugar
1 egg
1tsp vanilla
Preparation:preheated oven 180
Mix all in the bowl on speed 5 for 3 to 4 seconds
Scrape down sides of bowl if it needs it
Mix on speed 6 until all the dough sticks to the sides of the bowl
Roll tablespoonfuls of the mixture into balls and flatten with a fork place about 4cm apart on prepared baking tray. Bake in preheated oven for 15 minutes or until golden .Stand on baking tray for 5 minutes before transferring to a wire rack to cool.

jsthermie - I had a whole heap of peanuts from our organic co-op which I didn't want to go stale and so made these biscuits after first making the peanut butter in thermie (using macadamia nut oil). I also used rapadura as the sugar in the biscuits.
I didn't think they would turn out but they are so YUMMY! Will have to make more.

Wow, a cookie without flour - never heard of this method before fundj. To be honest I googled to see if it was possible as I thought you may have forgotten to add the flour as an ingredient. Sorry for doubting you, I found mention of flourless peanut butter cookies on the net. :-* :-*

My DH is a peanut butter fanatic but as he is now dairy free I have been having trouble finding cookies that he will like and these ones fit the bill perfectly. Thanks for posting the recipe.
