Title: What ingredients do you put in your scrolls?
Post by: dede on June 11, 2011, 01:40:11 pm
Hi everyone,
I'm just wanting some ideas on different things people put in their scrolls. Thought these would be a nice change from sandwiches for the kids lunches. Ive made cinnamon scrolls before which are delicious but only as a treat now and then. Today I made some pizza scrolls which lasted all of an hour before they were all gone. I thought I would try some vegemite and cheese scrolls next and maybe jam scrolls. What else do others use?

Dede, your pizza scrolls last about the same amount of time that mine do - which is fantastic unless you want to freeze them for lunches!!!

I also make the vegemite and cheese ones, have made just ham and cheese for a certain DD, cheese and chives is another nice one as is bolognaise sauce and cheese  :)

I guess if they didnt get eaten then I would worry. At least I know they will never go to waste lol.
I couldn't believe how quick they disappeared. I know I have a big family but I thought they would at least last 1 and 1/2 hours.
I like the idea of something different for lunch boxes. I thought I would put a list together of different ingredients I could use by getting other peoples ideas.

My son's favourite is cheese, sliced olives (lots of them!), sundried tomato and basil. I have also made a mushroom, garlic, parsley and onion one.

Hi Dede,

What a great idea for lunch boxes.

Please would love the recipe.

My son is having fried  rice most days, but I am always scratching around looking for something with his fruit for recess.

The fried rice is from Quirky Jo's chicken a d fried rice and he loves it. It stays nice and warm in his thee of ask and I am happy as he is getting loads of veggies at lunchtime.

Hi Hally, I just used a bread dough recipe and let it rise in the Thermomix for an hour or until doubles in size then knock it down on  :: speed for 10 seconds.
I then put it on a well floured board and roll it out to around 60cm long and 25 cm wide. For the topping I used a mix of tomato paste and relish spread over the entire dough, then add what ever else you like in pizzas (ham or bacon, capsicum, pineapple, onion, olives etc etc)
Then of course the cheese (I used parmesan and cheddar)
Roll it up from the shortest ends and slice into inch wide circles (I made 15) and place on a lined tray, brush all the rounds with melted butter and bake in oven till cooked to your preferred brownness.
Hope that helps.

Hi Dede - I went to a TM class on Thursday where they showed us how to make pull aparts with garlic and herbs.  I went home and made a sundried tomato and olive one which was scrumptious and then Sat decided to to a sweet one with pears, walnuts and cinnamon.  The filling mix was a little wet so did scrolls instead.  I had made butter beforehand and used the buttermilk in the dough.  All the filling that fell out when rolling the scrolls I lathered over the top before baking.  Boy were they good.  Faffa I love the sound of the bolognaise sauce as a filling I will be definitely doing that next time the grandkids are around.  Bit like a sloppy joe but soooo much better.   ;D

Yum demak, They sound scrumptious.
I made some more Pizza scrolls this morning for a couple of hungry builders we have here at the moment, They were gone in one sitting and went down very well. They are so easy to whip together and have in the oven for any occasion. They are my new favourite thing at the moment. I think I will get creative and see what I can come up with. I think the possibilities are endless.

girls here is a tip to stop your fillings falling out or sliding around (so for bolognaise, or custard and almond etc) sprinkle the rolled out dough with a little flour and then the custard or what ever will stick to it  ;) Not fail proof you still need to take care but most certainly helps!

There are heaps of scroll recipes in the bread section. I was going to put a link to them but I think it will be easier if you just go to breads and type 'scrolls' in the search box. This (http://www.forumthermomix.com/index.php?topic=595.0) is one of my favourites but there are lots more yummy ones.

Well they are in the oven (LOL ;D)

Had no idea wether to,lie them flat or upright, so I have a mixture, they are all shapes and sizes, they look really funny, some look like calzones, others look like pizza mess.

I am sure it's like bread, it will take me a while.

Which way are we meant to bake them. Would love to see a photo of how to lay them out in the oven..
Let's hope they taste nice because they sure look very funny.

I would have loved to have seen a photo Hally - it wouldn't have upset you if we had a good laugh would it  ;) ;)  It is all a learning curve, I haven't ever made these myself but I am keeping a list of all the fillings everyone suggests for when I do get around to it.

Yours look great, will do that next time.

Mine are just all mover the place, but theyntaste good, dont think DS is going to mind about even sizes and shapes, he will just munch his way through the big one. It's the fun Of trying too.

You can hide almost anything in them. I look at Bakers' Delight and see what they put in theirs and then do it at home.

Do other people give them a second rise after they are on the tray ready to bake or just bake straight away?

I do a second rise, find it squashed everything together  :D

We have been racking our brains to come up with all the fillings and have added

sweet chilli sauce and cheese
sun dried tomato and feta
spinach and feta

I know there are heaps more as I make them all the time and generally throw in what I have to hand  :)

Is the spinach cooked first Kathryn?
Title: Re: What ingredients do you put in your scrolls?

Depends on what I have at hand JD. If not already cooked (and generally a left over!!), then I shred it finely before adding it (my preferred method) but I do use up cooked spinach for sure. I have also been know to put either raw or cooked into my doughs to turn them green and call them shrek doughs so the kids will eat them lol

Now thats a great idea faffa_70, They eat it cause its green and dont even realize they are getting some extra goodness from it as well. I will remember that one.

We love the filling from Cathy's swirly rolls  (http://www.forumthermomix.com/index.php?topic=2888.0) in our scrolls.  I haven't had much luck with the scone-type dough in Cathy's recipe (it doesn't cook through well for me), so I now use pizza dough with the delicious filling.  :)
