Does anyone have any ideas on how to make fluffy white with high fibre, my dh only likes white( give me a mixed seed wholemeal any day)?

I started pondering this the other day, also, what makes a llow gi white, was going to have a little google lol

I'd love to know too. I was thinking pysillium husks but they absorb a lot of liquid. I've been making white with lots of seeds in it. Could you grind the seeds up and add?

Could you mix in a couple of Tbspoons of Benefiber (http://www.chemistaustralia.com.au/products/benefiber-fibre-supplement-74-doses-261g.html) into the bread dough to make it higher in fiber? It says it can be used in baking and is made with Wheat dextrin (100%)

Benefiber is a fiber supplement that has wheat dextrin, a component that dissolves easily into liquids or foods to help you get ample fiber. Fiber is essential to your diet, as it promotes a healthy digestive system and provides you with energy. If you are interested in cooking with Benefiber, learning how to incorporate it into a baking recipe can help you get the fiber you need
1) Select a baking recipe of your choice. Benefiber can be added to a number of baking recipes including breads, cakes, sauces for foods like baked pastas and chicken, or in soft desserts like bread pudding.
2) Add three tablespoons of Benefiber to the water in your baking recipe and mix it thoroughly. If your recipe doesn't require water, mix it in with whatever liquid form your baking recipe requires, such as oil or milk.
3) Add the liquid Benefiber mixture into your baking recipe as the recipe instructs you to. Benefiber has no taste, so no special alterations need to be made when adding it to your baking. Just insure it is mixed well with the liquid form of your recipe and bake accordingly.
According to the bottle it says that 2 teaspoons of benifibre contains 3 grams of dietary fibre.
So if 3 Tablespoons of Benifibre are added to the bread dough that will add around 13.5 Grams of fibre + the fibre already contained in the bread flour I worked out to be around 17g would give you a total of 30g fibre per loaf. (Depending on flour used)

And apparently there needs to be 4 grams fibre per serve (2 slices) to be classed as High in fibre. So depending how many slices you get out of your loaf you would probably have around 4 grams per serve with the added Benefiber.

There would probably be 8 gms in the slice I cut ;D ;D, especially whilst it is still hot.

I know what you mean Judy, Nothing beats a freshly cooked slice of bread with some butter. :P

I put about 100g oatbran in my loaf which has 600g flour. I haven't made this particular bread with the TangZhong method, but I reckon it will make a really lovely soft loaf.
