I have been thinking of trying to make some butter, and was planning on putting a bit of EVOO in it to make it softer in fridge, but as I've recently been reading about the health benefits of coconut oil, was wondering if that might work instead? As someone who has never made butter OR used coconut oil at all, I have no idea if it would make it taste funny, or change consistency too much?
Any thoughts on the matter would be appreaciated! ;)
Also, where does one purchase coconut oil???

I think it would taste quite coconutty (not really a word I know) and I think you would be better off using a more neutral tasting oil.
You can buy coconut oil in most health food stores and online. I am sure JD will come along and link some threads talking about it. I really should go to sleep now sorry!!

Coconut oil is a saturated fat and is solid below approximately 25 degrees. It would be hard as a rock in the fridge so will definitely not help you to achieve a spreadable consistency!
Stick with a light flavoured EVOO. ;)

I agree with MKR. Can't see any advantage in adding Coconut oil. I have added Rice Bran oil and this is OK.

Thanks everyone - of course it would harden the butter, I'm an idiot!! I'll go with the EVOO then.
