Title: Doubling icecream recipes

I haven't made much icecream in the thermie cos I found it a bit of a pain to keep stirring. I'm hoping my shiny brand new 2 ltr Cuisinart icecream maker will fix that.  ;D

But looking at tmx recipes, I'm not sure how much they make. I would like to double recipes both for convenience and also so I have enough eggwhites to make those nice raspberry friands I saw somewhere straight after :)

I know some of you have the 2 ltr ice cream maker, so help please. Can you successfully double the tmx recipes and then fit it all in the icecream maker? (Three teens currently on holiday eagerly await your reply  :D)

We don't seem to have any takers on this question. Why don't you give it a try? Just make the icecream, but don't go over the 2l mark on the bowl. You could always mix the icecream ingredients in 2 lots and then put them in the machine.
I guess with 3 teens waiting you may well have gone ahead anyway.

I have made double recipes of the EDC vanilla icecream and also the chocolate icecream from the forum, and both have worked fine.  Like cookie said, I just made sure that the total volume wasnt over 2L.  I made the mix in the TMX, let it cool in the fridge overnight, and then churned it in the cuisinart icecream maker the next day.  Works a treat!

Great idea!!

My red cuisinart ice cream maker arrived today,  It's already been put in the freezer.   If I make the ice cream in the TMX today and chill it We can have ice cream with pancakes for breakfast tomorrow.   ;D ;D

I find the TMX great for making custard based ice cream.  put it in the fridge over night and make it the next day.. There are many different bases, so you need to decide which one you like.  there is quite a lot of discussion as to which cream to use.  I mostly go with whipping  cream.
This is the basic recipe I use at the moment.

300 mls.  Semi skim milk
4 egg yolks
75g caster sugar
5g. Corn flour
300mls whipping cream

Zap first 4 ingredients together, 10 sec.  Speed 4
Cook 5 mins, 80o, speed 4.

Cool in fridge over night
Beat cream to soft peaks and fold through custard.
Process in ice cream machine.

While it is churning you can add other cold ingredients.
Store in FReezer.

If I have too much base I just Keep it in the fridge and process it later,

Didn't the ice-cream maker come with recipes girls?

Chookie, do us non-ice-cream maker owners, just make that custard then freeze it in a shallow tray once it is cold and sort of follow the instructions from the EDC?

I see a lot of icecream recipes which say to use an icecream maker. Can somebody please explain the basics behind what to do after making the custard mix. Thanks.

I put mine in the fridge overnight to chill and then use it in the icecream maker the next day, according to the directions of the icecream maker.

I've ice cream in the fridge cooling and my bowl in the freezer.  DS thinks that at midnight the 12 hours will be up and I'll be able to make him ice cream.   :D  As IF!!

This one is for Judy,  you will notice that it has a little vodka.
The recipe is from Cook's Country, an American magazine.  I have adapted it for the TMX.  I have not tried it as DH can't eat strawberries.  I might try it with Raspberries.

Magic Strawberry Icecream
1 1/2 cups of hulled strawberries.
1/2 cup sweetened condensed milk
30g white chocolate chips
1 dessertspoon of vodka
1/2 teaspoon vanilla extract pinch of salt
1  1/4 cups of whipping cream

Whip cream to soft peaks,  set aside.   No need to wash out bowl
Zap strawberries to a pulp.  Should give  3/4 of cup,  set aside .  No need to wash bowl
Add con. milk,chocolate chips, vanilla and vodka to bowl.with salt.  Mix and heat until chocolate melts.
Cool for 10 mins and fold in Strawberry mash and 1/3 of the cream.
Pour over remaining cream in bowl.  Fold in by hand to combine.
Freeze in air tight container until firm.  Minimum of 6 hours.
If not eating immediately,  place glad wrap on surface of ice cream.

The vodka prevents the ice cream from setting hard.

This forum really is magic. Ask a "duh" question and you get not only polite helpful responses but loads of great extra info as well!

I did go ahead and make a double batch anyway even though I was worried the mix would overflow and I would make another mess to clean up in my disaster zone of a kitchen. But all good. Made double the EDC creamy vanilla (cooked it 8 minutes instead of 5) with 75g of (very rich) organic cocoa added. Chilled it while I made the friands and dinner then stuck it all in the icecream maker and yum. Creamy rich choc icecream for dessert.

Thank you all for your responses and thank you Chookie for the recipes. They are both on the to do list  :)

djinni373, can you tell me the recipe for the raspberry friands that you made with your excess egg whites please?  I have just whipped up a batch of chookies icecream mix, and have 4 egg whites to use up.  Thanks - they sound yummy!

KJH,  I used 2 egg whites in the Norwegian Fish Cakes that I have just posted.  They also freeze well.  Or on top of Queen Of Puddings..

Thanks djinni,  will try those friands out soon.  Were you happy with how they turned out?

And thanks to Chookie for her basic ice-cream recipe in this post.  I tried it out today, and just added 1 tsp of vanilla bean paste to the cream as I whipped it.  I used an ice-cream machine to churn it, and it made the most gorgeous vanilla ice-cream ever  :-*  Much nicer than the EDC one to my taste!

KJH the one friand I got to eat was beautiful. Maybe a shade heavier than one I paid $4 for the other day at coffee with the girls, but still really nice. The other 11 disappeared very quickly. The DTs said the friands were so terrible they had to keep eating them to find a good one lol

Yes please to the low fat recipe Chookie. My waistline is expanding at an alarming rate. I'm off to dig out some diet recipes to counteract our current icecream binge. Love the icecream maker but licking the bowl is proving problematic  ;D

I have just made and tasted a lot the best icecream ever. It is this recipe of Chookie's with raspberry coulis folded through before it goes in the freezer. It is amazing. I almost turned the cream into butter and it seems to have given the icecream a very intense taste. I'll post a photo after it sets if we don't guts eat it all.
