Name of Recipe:Roast Chicken with Hazelnuts and Honey
Number of People:4
Ingredients:
1 large chicken, jointed
2 onions, roughly chopped,
4 tbs olive oil
1 tsp ground ginger
1 tsp ground cinnamon
1 generous pinch of saffron
juice of 1 lemon
4 tbs cold water
2 tsp sea salt
1 tsp black pepper
100 gm unskinned hazelnuts, toasted
70 gm honey
2 tbs rosewater 2 chopped spring onions
Preparation:In a large bowl, mix chicken, onions, olive oil,ginger, cinnamon, saffron, lemon juice, water, salt and pepper and marinade overnight.
Arrange the chicken and marinade in a baking tray, skin side up and cook at 190C for about 35 minutes.
While the chicken is roasting, mix honey, rosewater and nuts to make a rough paste. When chicken almost done, spread honey paste over the pieces and return to oven to brown for 5-10 minutes until nuts are golden brown.
Serve with spring onion garnish.

Tips/Hints: This recipe is from "Ottolenghi: The Cookbook" and I hope that they don't mind. This is not a Thermomix recipe, but is so good that I think everyone should try it at least once!!

Thanks Amanda - it does look great and I think Ottolenghi should look at it as advertising/promotion - it's not the whole book !!

This caught my eye as I am halfway through prepping the recipe for a dinner party tonight using the Ottolenghi cookbook which I LOVE. A pleasant surprise to see it here on the forum!

It's an absolute beauty, the combination of rose water, roasted hazelnuts and honey is magic on the chicken. I had happy guests! I did all my prep in my TMX.
