Roast Chicken in Banana Leaf
2-4 depending on size of chicken
Ingredients
Chicken 1 size 1.2 to 1.4
Salt a pinch
Crushed black pepper corns a pinch
Shallots 50 g
Garlic 25 g
Turmeric 50 g
Lesser galangal (ken cur) 25 g
Galangal (Laos) 25 g
Candlenuts 25 g
Birds eye chillies 5
Red chillies 2 large, seeds out
Lemon grass 4 stalks
Palm sugar 25 g
Cooking oil 2tbsp
Tapioca (cassava) leaves 200 g blanched
Salam leaves 2 left whole
Banana leaves for wrapping and sate stick to fasten
Wash chicken inside out and season with salt and pepper
Chop all ingredients in TM apart from tapioca, Salam and banana leaves. Looking for a nice rub texture
Set aside 1/4 of mixture
Remaining 3/4 of mixture add tapioca Ns Salam leaves, chop well
Stuff chicken with this mixture
Use remainder mixture to stuff under skin
Wrap in banana leaves and secure with sate stick
Or use tin foil, of course the flavor is better with banana leaves
Steam in Veroma for 35 mins
Open and transfer to pre-heated oven to 180 and roast fo approx 30-40 mins

Sounds great Hally. Absolutely no chance of getting some of those ingredients in Central Queensland though, more's the pity. I was interested to see the lesser Galangal though. I grow galangal as we can't get it here very often and was wondering what the lesser kind looked like and difference from the standard type?

It's absolutely delish. It's just another type of ginger, si if you can't find just use whatever type you can find
I too have problems with ingredients so I either match something or just leave it out, so far no disasters with this method. Have a go with what you can find :)

Thanks Hally - love the sound of this one . . . why don't you grow a banana tree or two? I have a largish one that decided to send down its roots through the pot (I put the pot on the ground when I brought it home and kind of forgot to move it . . :-)) Once it got its feet into the ground it just grew like Topsy! I don't think we'll ever get any fruit from it but the leaves are huge. Have three others (babies) in pots and trying to decide where to put them . . . . ???
If they'll grow in Sydney I don't see why they wouldn't grow in Perth - attractive tree and useful! :D (Can you get these plants in WA??)

I have a banana in perth, doesn't fruit but we use the leaves. Best to Blanche them briefly or hold over a cooktop to soften them a little so they're easier to work with.

Mum and dad have a banana tree but the bush turkeys get most of the bananas
Could still use the leaves though!!

Ppl just put those blue bags over the bananas to protect them from potential predators as well..

We had banana trees in our other house. They fruited too. In fact they grew very well.

We had a banana tree here for awhile but the dam things take off and you end up with 300 banana trees taking over your backyard pretty quickly. (300 may be a mild exaggeration) so we had to rip it up. It did fruit but always over the neighbours shed or whatever. My MIL wouldnt listen when I said they needed to stay on the tree longer before harvesting and we ended up with green triangle bananas that never ripened.
Having access to the leaves would be handy though for sure. They can be used as platters etc as well as parcels for cooking in.

Yes in Bali they use the leaves on the plates :)

I have just put mine in the varoma, unfortunately my leaf was in parts, one large & some small, so I have wrapped the best I can. I will serve dinner on the remainder leaves, yum :)
