Post by: judydawn on July 22, 2011, 05:00:02 am
We really enjoyed this.  Made half quantity and the crispy pancetta on top really makes this dish what it is.  5/5 from us

Considering we are not risotto lovers Cookie, yes it is. I've had a pack of pancetta in the freezer for goodness knows how long - forgot which recipe I even bought it for but will get another because this recipe is something you can whip up for unexpected visitors as everything else is always in the pantry/freezer.

I like this recipe Judy but DH isn't keen. I usually make it when there is just DS and me for supper.

This is a review posted 6/12/12 from kyton so thought I would add it to this earlier posting.

Made this as my first attempt at (a) making risotto in the TMX and (b) using the stock concentrate I made earlier today.

I added two garlic cloves with the shallot and increased the peas (frozen) to 300gm. I also cooked for an extra 3mins and ground in lots of pepper. I also accidentally bought prosciutto instead of pancetta but don't think it made that much of a difference as it was really only a garnish. Finished with chopped herbs from the garden (mixture of thyme, parsley, rosemary and oregano).

I quite liked it, husband thought it was nice. Sorry no photos - didn't even cross my mind LOL.
