I am back from our caravan trip. It was lovely to be and go around with our close friends which we obviously had never been this close as we slept all 5 + 1 baby in a caravan altogether!! ;)
After a week full of lasagne, pizza, piadina, desserts we put on weight but luckily just 1 kg for each.
Today's recipe is very light and simple. Cooking time is very short so that the veggies would remain a bit crunchy. You can increase or decrease steaming time depending on your preference:
Ingredients:
300g zucchini, julienned
300g carrots, julienned
350g water
25g extra virgin olive oil
10g lemon juice
1/2 tsp dried basil
Salt
Preparation:
Put water in TM Bowl
Place carrots in Varoma Bowl and zucchini in Varoma Tray. Steam for 9 minutes at Varoma Temperature on Speed 2. Transfer veggies into salad bowl, and let it cool
Empty the water. Rinse TM Bowl to cool it. Put olive oil, lemon juice, dried basil and salt. Mix for 10 seconds on Speed 3. Dress cooled veggies with this sauce and serve
You can serve this salad with meat, chicken or fish

McMich - Tried this salad last night after looking through the forum for a new recipe. Very easy and tastes great. We had it with marinated BBQ chicken and jacket potatoes.

Glad you enjoyed your holiday farfallina - living in such close quarters could be a real strain on any friendship but it sounds like you survived it :D

To be perfectly honest it was a bit hard to travel with a 1.5 years old. I mean it was harder for him. In 5 days he travelled from Istanbul to here, went around 3 different campings, everything was new and different for him.
It was also challenging to fit in camper. There were enough beds, right, but we had to unpack and pack several times since we made 3 stops.
We washed the dishes 3 times where there were public sinks , we lost (forgot) the detergent twice :)
However it was fun. It is nice to be with close friends.
I wasn't on a strict diet anyway but I was paying attention mostly on glysemic index values of the food we eat which means I wasn't having any bread, pasta or sweets. Instead, on our holiday our meals mostly based on food with high level of carbonhydrates such as lasagne, pizza, piadina, Turkish breakfast...etc. I am hoping to get rid of this 1 kg before we go to Istanbul so I have around 10 days! :)

I've recently discovered a wonderful salad with raw zucchini! Yes, uncooked!
I was sceptical at first but I did like it.
Cut zucchini with a veggie peeler into thin ribbons
Flavour with olive oil, chiffonaded mint leaves, salt, pepper and a good amount of fresh lemon juice. Toss altogether.
Let them sit a while so that they soften a bit
Transfer into the plates, Sprinkle with some grated parmesan.

That sounds nice too farfallina, I've never tried raw zucchini.

I didn't think I'd enjoy it, but I did
Chef says to add a good amount of fresh lemon juice and marinade a while.
He says we wouldn't want it to taste only raw zucchini ;)
