Name of Recipe: Potato salad dressing - from Ina Garten's Barefoot Contessa at Home
Ingredients:
1/2 cup fresh dill (10g)
1/2 cup (1 stalk) celery (50g)
1/2 cup (1 small) red onion (30g)
1 cup good mayonnaise (180g)
1/4 cup white wine, milk or buttermilk (45g)
2 tbsp dijon mustard (30g)
2 tbsp grain mustard (30g)
1 tsp salt
1tsp pepper
Preparation:
Chop 1st 3 ingredients 4 seconds on speed 5.
Scrape down sides and add remaining ingredients & blend 5 seconds on speed 2.
Pour over your cooked potatoes & combine.
Tips/Hints:
Makes more than enough dressing for 1.4 kgs (3 pounds) of potatoes. You can add most to cooked potatoes, and sometimes the potatoes will soak up the dressing after a few hours in the fridge, so add the remainder.
Sounds like a lot of dill if you're not used to dill, but it's really delicious and has been a consistent hit at gatherings.

Hope you enjoy it. I was at the markets early on Sunday; there were kipfler potatoes at a great price and a huge bunch of dill so I knew what I had to do.
There are so many versions of potato salad. I like the way I had it once in Austria, seemed to be a vinegar/sugar base rather than creamy, and the potatoes were yellow. Anyone know this one?

Vivaroo, I have a little recipe book a friend bought me back from Austria. There is a recipe in it called Tyrolean-style Potato salad using canned salad potatoes that I can give you if you like but there is a note that says
"Viennese Potato Salad (http://www.cooking.com/recipes-and-more/recipes/Viennese-Potato-Salad-recipe-4334.aspx) is also well know in eastern Austria, where it is made without diced bacon. A small, yellow, almost waxy potato from that region, (Kipfler) is particularly suited for such salads".
I found the recipe for you as that may be more of what you are thinking about.

I will give this a go, sounds nice, do you mean white wine vinegar?

Give it a try Hally - it's definitely wine not vinegar, sounded a bit weird to me when I first read the recipe. It thins the sauce and gives it a little tang, but not too sharp.
JudyDawn that Viennese salad sounds like the one, there was no bacon in the one I remember and I was near Vienna. Thanks :)

Hi JD - I finally tried the Viennese Potato Salad last night and it was lovely. A good change from the usual mayonnaise salad but still seemed kind of creamy, the idea of adding stock over the cooked potatoes is good so it is not dry.
