Does anyone know if it's possible to cheat when making Focaccia like it is when making normal bread? I never do the 2 rises for normal bread when I'm doing our daily loaf. The dough goes straight into the tin at night, is popped into the fridge to rise slowly overnight, and then goes in the oven in the morning. No fuss.
Can Focaccia miss its first rise too? Which would probably mean just a 30 min rise before baking it, I'm guessing.
I'm about to branch out into making Focaccia now to have with soups, etc.
Looking forward to hearing your views / experiences.

I was just wondering what bread recipe you use for your one rise in the fridge overnight? Would any one work? Also do you cover the dough with a tea towel, or some glad wrap when it is in the fridge? It sounds much easier than trying to do the bread in the morning. I am finding I am mostly making bread on the weekends, as there are always errands etc to run during the week and I can't guarantee that I will be home for the duration of the bread making.

I use any recipe
After the 1st rise knock down, and shape into rolls or loaf or bread tin, if you do not have time just in a bowl i cover mine with a tea towel
how was bali ? i am going back in 4 weeks ;D

Thanks Fundj, Bali was great, as usual. I will pm you re our ideas for land etc. Lucky you to be back in a month. (very jealous!!!)
Now I will make some dough tonight and see how it goes tomorrow morning. Ive mostly been making JulieO's cobb loaf. It goes in a cold oven, right??

Preheat oven 200/180C. Place a small bowl containing boiling water on floor of oven.

Hi, sorry Virgo9, I only just noticed your question. Yes, I use any recipe this way, and I don't bother with a 2nd rise ever since reading somewhere on this forum that someone didn't and it made almost no difference. I have to agree - it makes very little difference. So I get the dough out of the TMX, pop it into my loaf tin, slash the top so it'll rise evenly and bake evenly, then put it into the fridge. I don't cover it or do anything to it ('cos I'm lazy!!). I then heat up the oven in the morning (220oc) and put in the now perfectly risen dough once the oven is ready, together with a couple of ice cubes on the oven tray to create steam and so get a better crust. It has never failed me yet.
