I got the recipe from one of the "Bimby" recipe books
It was the first time for me I milled flour with Thermomix
I found it quite impressive
Spelt and Buckwheat Bread
Ingredients:
350g spelt
150g buckwheat
350g water
40g fresh yeast
10g honey
10g salt
40g vinegar
90g sunflower seeds
50g flaxseeds (linseeds)
40g pumpkin seeds
50g sesame seeds
Butter
Oats
Preparation:
Put 250g of spelt in TM Bowl and mill for 1 minute on Speed 10. Set aside
Put the remaining 100g of spelt and 150g of buckwheat. Mill for 1 minute on Speed 10. Set aside together with previously milled flour
Warm water for 1 minute at 37ºC on Speed 1
Add yeast and honey. Mix for 4 seconds on Speed 4
Add flours, salt, vinegar and all the seeds. Knead for 4 minutes
Grease an approx. 30 x 12 x 10cm loaf tin, sprinkle with oats. (My tin is 5cm deep so I used a second smaller one and baked 2 bread)
Transfer bread dough into loaf tin. Sprinkle with oats on the top. Cover with a tea towel and let it rise for 1.5 - 2 hours.
Bake in preheated oven at 220ºC for 40 minutes. (Since I had 5cm deep tins I baked 4-5 minutes less)
Let it rest for 10 minutes in the tin and then let it cool on the wire racks
Adapted with a few changes from the recipe called "Pane al Farro e Grano Saraceno" in the book named Cucinare a Modo Mio

I have never used any of these flours before, is it heavy bread farfallina ???

It was a first also for me fundj ;)
I didn't mill those grains before nor bought them as flour
I've recently read many articles regarding health benefits of spelt, buckwheat, rye, kamut...
So I decided to give it a try
In my opinion it is not a light bread, it is quite filling
I enjoyed the taste of it
I don't know how the result would be if I bought spelt and buckwheat as flour instead of milling them myself
I don't know when but I want to experiment some bread recipe also with barley

That looks interesting farfallina. I hope to be going to some classes making bread using spelt and buckwheat a bit later in the year. They will be sourdough.

Hi there. I am new to Thermomix (but loving it so far). Love the idea of making bread and have been quite successful with cheese and bacon rolls and basic Bimby bread. But -- can anyone please tell me if I am not able to get hold of grains if I could use the appropriate flour(s) instead. Love the idea of spelt and buckwheat etc.

I am happy you are enjoying your Thermomix ;)
There are many many bread recipes in the forum that you can make with your thermomix
Since you are new, I'd recommend you to start with basic ones and then go on
If you like whole grain flour bread I could recommend you to try New York Rye Bread (http://www.forumthermomix.com/index.php?topic=5645.0) and Thyme Wholewheat Flour Bread (http://www.forumthermomix.com/index.php?topic=3935.0)for example
For white bread I can recommend Olive and Walnut Bread (http://www.forumthermomix.com/index.php?topic=5942.0) (It was the first bread recipe ever I made with my Thermomix), Danubio (http://www.forumthermomix.com/index.php?topic=4968.0) and Walnut Bread (http://www.forumthermomix.com/index.php?topic=5382.0).
As for this recipe.. I believe you can make it with the appropriate flours. This is the only recipe I milled the flour so far anyway.
I haven't tried this bread with the flours though. I don't know if you'd need to reduce water and yeast a bit or they would be just fine as they are
