Title: Meganjane's Orange Cake

Delicious and easy!

Orange Cake

130g softened butter or butter blend such as Dairy Soft
120g castor sugar
2 eggs
160g plain flour
1 tsp baking powder
1/2 tsp bi-carb
Rind and juice of half an orange (use remainder for icing)

Beat butter and sugar for 2 minutes, speed 4.
Add 1 egg and beat again for 30 seconds to 1 minute.
Add dry ingredients and remaining egg and beat for 30 - 40 seconds, scraping down in between.
Add rind and blend for 10 seconds, speed 2.

Bake in an orange tin for 30 - 35 minutes at 180C

Ice with 1 1/2 cups icing sugar, remaining juice and rind, 2 tsp butter.

Sorry fundj, an orange tin is a cake tin specifically designed for orange cakes!! I used to make cakes for our local show and that's what was required for orange cakes...

I use my small loaf tin - 23 cm long x 10cm wide x 9cm deep. Any loaf tin as long as it's not too big. It's not a huge cake, as you can imagine, with only 1 cup of flour.

Thanks lellyj. Yes, and I've modified that original recipe to the one posted on this thread.
Kathryn, yes, that's pretty much the sort of tin I mean. It's basically a loaf tin.

MJ  the juice is only for the icing is that correct?

This cake is awesome..................really is.
For the flour i used
80g of brown rice flour
40g of almond meal
20g potato starch
20g tapioca starch  
Plus i added ½ teaspoon of poppy seeds
Will make again tomorrow with the juice  ;D

I just checked fundj and the recipe here says 'the juice of half an orange'. I had the word 'and' instead of 'an' which may have confused you! I've changed that bit now. :P
