Post by: cookie1 on October 07, 2011, 06:43:41 am
Crunchy Fruit Slice
Makes 24 pieces.
Ingredients
380g mixed dried fruit
110g nuts-I used almonds
100g glace cherries-I used cranberries
75g dried apricots
50g plain flour
115g golden syrup
1 egg
180g unsalted butter, in small pieces.

Method
Preheat oven to 1800.
Line a 26cm x 16cm tin.

Place apricots into bowl and chop. Set aside.
Chop almonds to the size you want.Set aside.
Place dried fruit, almonds, cherried, apricots and flour into a large bowl.
Heat butter and golden syrup in TMX bowl until melted and combined. Time will depend on how cold your butter is. Mine took 4 minutes, speed 2. Cool slightly and add egg. Give it a quick blend. Add butter etc to the large bowl and mix thoroughly. I did it by hand as it was easy.
Bake for 30-35 minutes.
Cool in pan and slice when cool.

Tips
The nuts could be left out for school.
I adapted the recipe from the latest Australian Good Food.

just started to make this and realised you haven't mentioned how much butter?
Add butter etc to the large bowl and mix thoroughly. I did it by hand as it was easy.

OMG how could I be so careless. It is 180g unsalted butter, chopped. Will amend the recipe. So very sorry.

I really messed this up. Thanks CP for sorting it out for me. I have now put when to add the egg into the method.
