Hi all,

Well where to begin. I just wrote a big long explanation of me and went to another page to copy a recipe I'd typed out for a friend and when I came back my message was lost. :-(

Long story short.
Have wanted a TMX for over 12 mths. My beste has one and loves it. She's a real 'sweets' baker and hubby doesn't see me as the same type of cook as her and couldn't see the value.

Anyway, 12 mths down the track, and although he still wasn't convinced I needed anything at all (cause there's nothing you can do in them you can't already do in the kitchen in his eyes), wrapped up under the tree is a TC with a spare bowl.

I'm excited by the prospect of another set of hands in the kitchen... I want to make my stock and butter and all the mother things I did with multiple appliances in the one! (without having to pull the others in and out of the cupboard all the time).

I'm from Adelaide, have DS9 DD7 and DS 21mths. I work from home and can't wait for Xmas. Am thrilled you are so accepting, and look forward to some guidance in general.

Here's a recipe I made this week by hand, even the garam masala I had to make up as I realized I was out... Should easily to convert to a thermie of either sort. I forgot how much I loved it, and so did hubby. Left the chilli out till the end for the kids.can't wait to make it more often now. (haven't made it in toooooo long)

Quick question, some people have questioned me on how manyi could feed, will it (either, this was before ) do my family of 5 for awhile? Like rice and a curry for example?

Chicken in a cashew nut sauce.

2 onions
2tbsp tomato purée
1/2 cup cashews
1 1/2 tsp Garam masala
1 clove of garlic crushed
1 tsp chili powder ( I left this out till after I served the kids) but I love it with a kick.
1 tbsp lemon juice ( I add just over as I love the flavour of the nut/ sour combo, and it's more unique to many Indian curries I find. Very moorish)
1/4 tsp ground turmeric
1 tsp salt
1 tbsp natural yoghurt
2 tbsp corn oil ( I used sunflower, sure it wouldnt matter)
1 tbsp chopped fresh coriander
1 tbsp sultanas ( I leave these out as I am not a fan of sultanas in curries... Funny I know)
450gm boneless chicken breast cut to pieces
175 gm button mushrooms (I put less as kids aren't a HUGE fan of mushys)
1 1/4 cups water
Another tbsp fresh coriander for garnish

Ok now recipe is simple, just a few ingredients.not sure if I said before but I was actually out of Garam masala so even had to find a recipe for and make that up to get my 1 1/2 tsp lol

1.Cut onions to qtr and place in food processor or blender, process for 1 min (just minced basically so won't take long in thermie.

2.add tomato purée,cashews,Garam masala, garlic, chili, lemon juice,turmeric,salt and yoghurt, and process further 1 1/2 -2 mins

3. Heat oil in saucepan and pour in the spice mixture. Fry for 2 mins over med to low heat.add the coriander, sultanas and chicken, and stir fry mixture for 1 min.

4. Add the mushrooms, pour in the water and bring to a simmer. Cover the saucepan and cook over a low heat for about 10 mins. Check chicken in cooked and sauce is thick enough, and cook longer if necessary.

5. To serve ladle into a serving dish and garnish with more coriander.

ENJOY. I hope you love it. I forgot how much I did, till I made it again. :-) The sauce is the best bit, so it's great with the rice (one of the things I like in general about Indian curries) on its own. I added some green vege to the plates.

Hi Lilli33, welcome to the forum.  It must be hard for you to look at that parcel under the tree and not be able to use it  ;)
Your recipe sounds very tasty - it is interesting to see the chopping times in a food processor compared to what we are all now familiar with in the Thermomix.  We chop for seconds as opposed to minutes the old way.
There are families on here with several children so cooking for 5 is not a problem in the Thermomix and I daresay the TC holds the same quantities.

Thanks guys. Yes I believe the bowl is also 2L Am assuming the basket is the same. Does it hold 2 cups of rice? Or more, it looks kinda small.

Yes the big boxes underage tree are hard to see... But like anything, it also makes it ore exciting. My birthday is jan, and I had rouse that too (wink wink) so figured I need to have atleastsomething to open and excited about xmas morning. Plus when you've waited this long.... And KNOW what your getting (I like surprises),then I can join the kids inthe countdown. (best bit is we all benefit).

Yes the times must seem huge. This is where the prep time at the very least is cut down! Yay.

Lillie33, the basket holds up to 400g of rice (2 cups) which becomes 4 cups when steamed.  For the 2 of us I only need 100g or less but usually cook 300g and freeze the excess.

Greats thanks JD (can I call you that hehehe) . Great cause atm I do 2 cups and it's plenty for us 5. Usually with enough for a left over lunch for hubby or rice with milk n sugar for my daughter. Lol.

Yes, Cornish, hubby has already said, well maybe you can make something to take to mum and dads. (yay, Xmas not here this year, gives me a little more time to play, and less time to worry about the place looking like Xmas morning)...

Am thinking maybe sorbet, and I could do the custard? Want to keep it simple, as I will be very much a virgin thermie chef!  :-))

Thanks guys, yes I cahardly wait. I went to a thermomix demo today with a friend, and it inspired me even more, for all those LITTLE things. Especially having never had a food processor.

Is it really still2 weeks to wait???? Oh man!

Welcome to the Thermo Thingo owners as I have decided to call myself.
I have my TC and I love it to bits.  Have it less than a month. 
I couldn't wait til Christmas.  But it came with a baonus Pizza Maker so that is going under the tree.
i had been wanting a TM, but things didn't go the way we had planned and a TC was the best we could do.
I have used it almost every day since it arrived.
My DH now thinks the icecream (Salted Caramel Maple) is even better than vanilla that has been his fave since ...
DGS loves the Chocolate icecream I have been making.  I think we are on the 4th batch of each.  In just 4 weeks   :D

Now I am looking at Christmas treats to make and see there is a great selection on here.
Much better than the recipe book that came with Thermo Thingo.

At least you now have time to collect all of your ingredients and have the pantry ready for the big opening.

Thanks Nola, hi Rosie ... Sounds great. Yeah I soooo want to open. It's in standard brown boxes, haven't actually gotten around to "wrapping" but the boxes are acting like wrapping and keeping my hands off. Good thing is I haven't actually seen the box itself, so even opening and revealing them will be exciting. (funny once your a mum of 3 and don't really have a 'need' for anything inparticular what can get you excited!!!!

I can think already of so many little ways I will use it everyday. Will take a bit of learning for the full meals I think. Can twait to make the maple syrup icecream though. Bought the 100%pure MS this week. I could do it now I guess, but want to wait to make and blend it.

I have to say the demo today, I did find the mushroom risotto a little bland and a little watery, and the bread didn't have a great flavour (other than the fact it was freshly made, hard to have any fresh out the oven bread not edible). Am assuming the risotto could have just done with a little more flavour tweaking in the recipe, and am wondering if the bread was anything to do with it being buckwheat ? Funny thing was she asked what we thought of the food, and I commented the risotto was a little bland for me,but it was prob more the recipe... and she said (she is only a couple of months in) yeah with the demo we are just trying to show you what the machine can do, not create really gourmet meals youre going to love. Lol. I had a giggle to myself, and I didn't mind.

I found a couple of the risotto's a bit bland for me too Lillie, but the Capsicum and Chorizzo risotto is really nice.

I'm afraid I beg to differ with your consultant Lilli - isn't the general idea of a demo to produce quick, tasty food to encourage people to buy the machine. I think she should be going all out to make sure it is not bland if she is hoping to sell some machines.

I have to agree with you JD.  Surely it is better to offend (Wake up) a few sensitive tastebuds than to give the impression that the food is going to be bland.
MY TThingo makes the food anything but bland.  It depends on what goes into it.  I try to buy the freshest and as much organic food that I can.
And so far everything has been great.
Currently making the Chocolate Salami.  Mmm.  Taste tests have been good.

Yeah, thankfully I'm confident in the risotto (we love a good risotto) recipes I have that they will be tasty. That's why I chuckled to myself when she said it JD and Rosie, cause surely she didn't realise what she said???? Lol.

Will have to try the capsicum and chorizo too!

Will posts regular risotto I do when I work out how to convert it. Always really tasty. :P

Hi Lilli, had yhour curry tonight.  Loved it.  Added a bit more water to make sure the Thermie didn't run dry, but don't think I needed it.  DH said (licking his plate) yes it wasn't bad. :D

Oh yay, so pleased. It's lovely isn't it. I think that combo of citrus and natural yoghurt plus the cashews.... Oooh, I could make it again already.

Ah that's great... And licking the plate, if that's not a thumbs up, I don't know what is. ;D

When my DH does that, I know it is a sign of approval.  I had to reprimand him once when he forgot himself and did it in front of guests but they just laughed and said they were pleased to see he was enjoying his food once more. :-)) :-))

Lilli, you are quite welcome to our get togethers.  I don't think anyone will beat you up because you haven't got a TMX  ;)

Yippee yippeeee * runs and jumps kicking heels up* I have my machine. Didn't have time Xmas day to. Twelfth play, but have bee cooking up a storm since.

Did the cherry bites, yummy, have made abut 4 batches of sorbet or frozen fruit puréed etc everyone loves it. I had some condensed milk left from the balls, and after hubby took a few spoonfuls, there wasn't enough for another whole batch so used a dollop of this instead of sugar last night. It was great and made it a bit creamy. Had raspberries mango and nashi pear (as no one seemed to be eating and I knew they would add a nice sweetness). Was delicious!!!!

Risotto last night was perfect. I am having some trouble understanding this butterfly blade, and I'm sure the TMX butterfly is designed far better, but hopefully I'll get there.

Made vege stock yesterday, and it smelled divine. Thankfully I had fresh sage rosemary and flat leaf parsley being so close to Xmas, and used this for e risotto. Very pleased with it.

Anyway, made poached eggs this am, and have found a place for my steamer basket and lid now in the drawers (just below the machine) so feeling more and more comfy. I did a curry from here the night before last that was wi prawns. Lovely flavours but I used the fish. I was a bit nervous to be honest with so much waiting and then I finally had it.... Iykwim but confidence should start building now with each thing I do.

Lilli, try some bread.  The best option is to use all the liquid and 1/2 the flour, (Nola'ssuggestion), 2 mins. Kneading,   and then knead in the rest of the flour by hand on the bench(rosie's method). 10 kneads should be enough to get the gluten working.  Let rise double, form into whatever shape, let double then bake.    The TC kneads in a different manner to the TMX,  and all the recipes here have be developed for the TMX.  Start off with a basic recipe such as Isi's Portuguese Rolls or my No Fuss Roll .  Good luck and let us know how you are going.

I'm right there achookwoman. I have gone between the recipe in the TC book and your no fuss rolls one. The recipe in the hong kong TC book had 420g flour so I figured it should cope fine, and it did. It seemed to be mixed nicely (I liked your mixing on warm all the wet n yeast first) it is rising now.

When you say 10 kneads, you mean to add the extra right? So I won't need that as its all added. Or do that when I knock it down to work the gluten?

Will see how it goes (hubby wasn't happy with me not using the breadmaker so fingers crossed it works ok) I know the double rise is impt, to get it fluffy, so will knock it down and allow another rise (is that right) before I do my Cobb? ... Just realized it was julieO's Cobb loaf I used...  (have been following the no fuss rolls one and was going to do this) we are having a BBQ and thought a nice big Cobb would be good.

Yes Nola, I just have it in PDF. But it is great to have some when you're learning that really do go with the TC. Atleast to help me get my confidence..

The bread worked out nice, although it didn't look as big and round as the piccie. It was cooked through and a nice density. Looked lovely and brown. I only did 27 mins.  Cause it was browning so much, tested with a thermometer and it was over 100 so figured if cakes are cooked at 99 ( think I read that somewhere here) then the bread must be too. It sounded hollow ( I thought) and it was better than I expected.

Will keep trying. Made a quick dip with sundried tomatoes, garlic chives and flat leaf pasty with cream cheese. That was a hit.  :)

Have had a busy couple of days, hubby just keeps rolling his eyes at all the times I am grabbing for the TC and using it. Had another family here for dinner tonight and it was no stress which was nice. Fresh spaghetti and the bolognaise sauce, salted caramel And maple syrup icecream and lemon sorbet for dessert.plus some dip.

Poached eggs have been easy and a hit, just simple things like mixing my pancake mix yesterday. And kids don't seem to be able to get enough fruit sorbet... Don't add sugar they say so we can have a huge bowl..... Righteo then, and I did.

Making dip potato salad and heresy bread tomorrow for a new years BBQ... The journey continues. (and I love the way some disasters can be used in other dishes and become superstars) hehehe

I am going to check out this Hong Kong Book I think.
As Lilli says,  It is made for the TC and so even better than further converting the recipes from the TMX.
I seem to be getting good results with most of my own conversions,  My DH loves the bread I am making and I am really enjoying using fresh yeast.  Something I had never used before.
Mmm.  TC has settled in well in this household.
Still haven't tried sorbets.  Maybe tomorrow..  After we have been to the market to stock up on fruit.

great to hear the enthusiasm for the fresh fruit and food. Doesn't matter whether its TM or TC - we're all having fun and sharing the secrets and journey  8)

Yeah it's quite good. The lemon sorbet was lovely (and it's always a favorite of mine). I should try and write up the recipe as I looked and didn't see a straight lemon one here, so found one elsewhere and did what I figured would work... And it came out a treat. It was actually a lemon lime, but delicious and cut through the richness of the other nicely.

If you google 'lemon sorbet thermomix' nola & knittercook, you will find a variety of different recipes.
This (http://www.forumthermomix.com/index.php?topic=3562.0) is one I have posted on the forum & was made at a cooking demo. It was really nice.

Imagi excited, my first ever home made mayo ( I'm not a real mayo fan as it tastes a bit 'fatty' to me) but I needed it for m potato salad dressing, and I'm thrilled with both. Yay!

Loving this journey. Dinner was awesome last night and the new taste sensations my family will enjoy. Promise I'll write up my lemons sorbet later. Just wanted something I could whiz together when I needed it. Prob don't even need to do it the way I did, but it was delicious!
